    Experiment with different vinegars. Apple cider is sweet and mild. White balsamic is elegant. If you make a quantity of dressing, using walnut oil makes it easier to remix if you refrigerate it. I prefer a closer to 1:1 or 1:2 vinegar to oil mix. Bring on the beeets and artichokes!

    I want to make salads for my family everyday, but we need variety. I thought I'd build a salad using different lettuce base with a variety of dressings and toppings. I would think there would be infinite combinations. The trouble is, I don't know enough to optimally pair lettuces with vinegars beyond the standard recipes. Can you suggest a resource (book or video) that will help me learn how to build hundreds of different, great-tasting salads? Thanks. I love your videos!

      yellow mustard, or a grain mustard( brown) or honey mustard

      as a person who suffers with gout, the only thing that I have serious issues with when it comes to salads is anchovy pastes and spinich type greens. never had too many issues with beans. good luck.

    Buying four different types of lettuce for one salad seems a bit of overkill, considering produce prices in 2022 lol...I'll stick with the spring mix in the bags, which combine everything for me and is cheaper lol

      Yes. Acid and fat help you break down your veggies and get the most of them. This is very little dressing.

    What's the best way to dry your salad leaves if you don't have a spinner?

      Get a colander, put your salad in, put another bowl on top and shake. That should dry it OK too.

      better yet, wash your leaves and shake off the excess water then place it in a clean dish towel or paper towels shake rattle and roll it, now you can take out what you need and roll it back up and keep in the frig till you need it

      @@janetstrothman8087 you still have to wash those! Think about it, the companies do not change the water, like we would!. I got sick from unwashed -- pre-washed salad.

      Try Tom Yum soup; its basically lettuce in broth. Soup and salad is a good combo.

    wow. very good way to make salad and dressing but if you add 1 tsp of brown sugar on dressing thats will mouch better.

      +Vacheli Iyer Where do you live?I had only iceberg growing up then I moved to near La La land,wow,the ten different kinds of lettuce in the stores!! I adore Boston,bibb lettuce.I splurge and buy the fancy flavored balsamic vinegars from The Olive Wagon store.I mixed it up with a little oil and acv or rwv.W/the cheaper balsamic vinegars,I mix it up with oil, OJ,brown sugar,tiny bit of honey mustard ( hate Dijon ) and that makes a great dressing.

    Whenever you use acid ( vinegar , lemon juice) you ALWAYS balance with a pinch of sugar !!! The US seems to be the only country that is not aware of this basic rule ...😖
