I've never seen a umu with massive amount of food cooked in it. Even our umu back in Samoa don't cook as much food like that. Love the Tongan way of cooking in a umu..creative and can accommodate for large number of people. Now, it makes me hungry on this Sunday and there's only frozen chicken in the fridge (Auckland, NZ)...oi aue...lol.

Sorry uce, I ain't no Samoan grammar professor but its not 'malo le taumafai' but rather you should say 'malo le galulue' or 'malo le gasese' 'Malo le taumafai' means 'nice try mate, better luck next time' Clearly that does not apply here. Nevertheless we know what you meant. Just a lil advice from one uce to another. Malo le taumafai.
Oohh Yum.. Makes me hungry for Umu now. lol. Umu is Umu in both Samoa and Tonga, Same Family, One People. Malo le Au fai Umu, Malo le Au Malosi, Malo le Galue. Alofa Atu/ Ofa Atu #TOKOUSO
what i like about these videos you see these guys wearing old starter jackets fubu clothes , ol skool clothes passed down by american family members. i miss my polynesian family doing stuff like this
If anyone has seen Samoan umu the food is actually in direct contact with the hot stones only fish is cooked just two layers of banana leaves above and of course the duration of the umu is 30 minutes for a large one or just 25 minutes if the chief cook thinks the oven or umu is really hot. however i am amazed that the toko's food still got cooked even though there oven took on alot of water in the beginning .... malo le gasese, malo le tautua.
The Samoan umu is base on the direct heat from the rocks hence why you guys put rocks on the top. The Tongan umu is largely base on convection where it relies more on the circulation of the heat from the rock circulating around the food.If you notice the Tongan always try to have a bit of a gap between each layers and a gap between the last layer of food before closing. That’s to allow the hot steam to circulate to ever part of the food! Malo ofa atu
Wow, must of been a hot Umu cause the pulu is cooked the same level as the kumala, some are even charred, all in 1 hour? With multiple baskets? Good job then.
Yeah, it is funny lol. I guess it's because our ancestors didn't cultivate herbs and spices like other cultures did. If we wanted to give food seasoning, we would just use sea water😂. Our ancestors were always voyaging the vast Pacific, so I guess they didn't have time to pack in all the herbs and spices. This has probably led to us appreciating the natural taste of the foods we eat. I don't know, just a suggestion as to why us polys don't season our food much. 🙂
9 1 6 8 4 bro I remember tunuing some chicken and I added all these herbs to it. The oldies hated it 😂😂. They like it plain then add salt smh. That was the last time I tried introducing new flavours to the fams.

That's one massive ass umu. I didn't think the food was going to cook. But it did. I've never seen an umu done in this magnitude before. I think Tongan is under ground like hangi??? Correct me if I'm wrong. Samoans are above ground, with heaps of insulation on top to trap heat and cook food. I think that's the difference? Then I can I understand why you chose the Samoan method. You would need a big ass pit to put all that food in lol work smart is what I always tell my boss hehehe Malo tokoua, malie tonga. Malo aupito.
For me personally it doesn’t have to be certain since some of the commenters are disagreeing that it’s not even close to Samoan Style of Umu traditionally wise. I say Fuck Off, I’m Samoan and idgaf how it’s made whether island style or whatever. As long as it’s cooked then I’m ok with it. Respect tokos y’all made a bomb ass Umu and by far the biggest Umu I’ve ever seen on video or being recorded lol so do y’all and fuck all these don’t know how to cook mothafuckers haters on here. This is a tongan channel and they tittle it Samoan umu because of how the Samoans do it above the ground, different from how the tongans usually do it underground.

Tongan
Tongan umu history was a grave cooked under ground from the story of kava and umu tangata! If we cooked on top we called it tunu or ta'ota'o👑
Very true! This umu is Tongan style
In my 52 years of being a samoan, I've never seen or been part of a samoan umu done this way. The food looks great but your video title is incorrect
