    INGREDIENTS
    - 2 cups + 2 tablespoons whole milk
    - 1 1/4 cups heavy cream
    - 1 cup blueberries
    - 3/4 cup sugar
    - 2 tablespoons corn syrup
    - 1 teaspoon salt
    - 1 1/2 tablespoons Mira-Cleer (or corn starch)
    - 1 teaspoon vanilla extract
    - 1/4 cup dried lavender
    INSTRUCTIONS
    - To make the blueberry puree, blend blueberries with an immersion or countertop blender until smooth. Set aside.
    - In a 4-quart saucepan, combine the 2 cups milk, heavy cream, prepared blueberry puree, sugar, corn syrup, and salt. Whisk to combine and place over medium heat.
    - While the milk mixture is heating, combine the reserved 2 tablespoons milk and Mira-Cleer. Whisk until smooth and set aside.
    - Bring the milk mixture to a rolling boil and continue to boil for 1 minute. Remove from heat and slowly whisk in the Mira-Cleer slurry. Return to heat and bring back to a rolling boil. It is essential the mixture comes back to a rolling boil to activate the thickener.
    - Remove from heat and add the vanilla extract and dried lavender. Stir to combine and steep for 20 minutes.
    - Once steeped, strain to remove the lavender and pour the ice cream base into an airtight container. Cover and chill 6-8 hours. The ice cream base can be stored for up to 48 hours.
    - Once ready to chill, follow the manufacturer’s instructions with the ice cream maker. Churn approximately 25 minutes. Enjoy immediately as soft serve or pour into an airtight container and place in freezer for 4-6 hours for a hard serve.

    MMMMMMMMMM!!!!!! THANK YOU!!!!! I only discovered your site about 3 weeks ago, but you have truly transformed my ice cream game with the base recipe, delicious flavours, and your energy and charm. In these short weeks, I binge watched all your videos, but especially the ice cream weeks, and most especially since you changed to this recipe. I have made several of your recipes, and I've adapted the flavours to make up some ice creams to use seasonal ingredients. So good! But this ice cream week really takes the cake (haha) - very sophisticated! I am going to go get some food grade lavender asap. And now, I gotta learn about Mira-cleer... anyway, thank you! You do great work!

    I've said it before, and I'll say it again, if you need a thickener to make ice cream, your milk to cream ratio is wrong.

      other ice creams use egg yolks (custard base) which is a thickener. so yeah most ice cream bases have some kind of thickener in them. sorry you are wrong.
