- We the Dimasa people love our Judima. It is the ultimate celebration drink for us. We drink this traditional rice beer in happiness and in sorrow; during birth and death. It brings people together and is a major asset of the Dimasa community. You may or may not consider this a 'How to make rice beer at home' tutorial video, but I really wanted to make Judima and capture the whole process. We have skipped a few processes in this video because of the lack of time, but I hope you enjoy the video anyway. The feeling of drinking homemade rice beer is beyond the feeling any other alcoholic beverage gives.
Dimasa is a tribal community thriving in the Northeast of India, mainly in the Dima Hasao and Cachar Districts of Assam and few parts of Nagaland. This video was shot at Haflong, Assam. It is the only hill station in Assam and my beloved hometown.

Apong in Mising.There are two types of apong actually,One is the Nogin apong & another is Poro(sai mod)

That one rice beer I tasted was approx 12 years ago, but it was sweet and sour with rice in it. And here in arunachal call it "APONG"💜
Mishing people in Assam call it apong too
Tai Ahom people call it Luk Lao or Lao paani, and in pure Assamese it's called Rohi haaz

This is a beautiful video on traditional rice-wine making from the Dimasa perspective.
Having grown up in a Borosa household, I am quite acquainted with the rice wine-making process. The method is almost the same. We call the Humao (yeast) Amao (एमाव) and these are made into round balls instead of flat cakes.
Interestingly 4 pieces of Humao/Amaos are considered 1 unit (ज'खायसे) of ingredient required to prepare one-earthen pot of rice-wine. Hence, in some of the eastern Borosa dialect it's also called "Jokhai" otherwise every other Borosa calls it Jou.
