    Salting the chicken really does work. It’s like a dry brine. I do that with turkeys. The dry brine on turkeys passes a wet brine by a mile and is so much easier. The flavor of the turkey after a dry brine is unbelievable.

    Made this tonight, with the exception of adding an extra clove of garlic and I didn’t get to salt the chicken very long. Also I did about 1/3 cup of finely chopped onion instead of shallot. It was absolutely delicious. My two finicky boys ate it all up, and I was sure to tell them afterward, “this is chicken Florentine, OK?” And they were all for it. Thanks for yet another great recipe, Elizabeth!

      That's the beauty of Beth's recipes - they look (and taste) so gorgeous that they look like they are difficult and time-consuming while most are pretty simple and come together easily. Especially if you read through first and gather and measure everything before you start.

    Made this last night, delicious.nJust a very nice twist on chicken. My wife and agreed that some mushrooms would be a great addition with that sauce.

    Hi Beth! That makes my mouth water and reminds me a bit of your White Wine Chicken recipe - one of my faves! They really aren't the same at all, but this one seems like a quicker close relative! 😂 I'm with you on the sauce consistency and I love a touch of cream in there to smooth everything out and add that touch of sumptuousness. Haha Fancy word, but it's what comes to mind, so I'm going with it!
