Salting the chicken really does work. It’s like a dry brine. I do that with turkeys. The dry brine on turkeys passes a wet brine by a mile and is so much easier. The flavor of the turkey after a dry brine is unbelievable.

Made this tonight, with the exception of adding an extra clove of garlic and I didn’t get to salt the chicken very long. Also I did about 1/3 cup of finely chopped onion instead of shallot. It was absolutely delicious. My two finicky boys ate it all up, and I was sure to tell them afterward, “this is chicken Florentine, OK?” And they were all for it. They really aren't the same at all, but this one seems like a quicker close relative! 😂 I'm with you on the sauce consistency and I love a touch of cream in there to smooth everything out and add that touch of sumptuousness. Sure you could do that too. It just makes it a bit heavier that way, but really you could do either.
