I've experienced Queen + Adam, and they honor Freddie in several ways: Adam talks about Freddie's influence, there are multiple songs which have old Freddie footage playing (and John too!), and most importantly, they honor Freddie by allowing another generation to hear his incredible songs performed live. It is an absolutely mind-blowing show. I love the videos, but in person there's something extra special about Adam's phenomenal voice and the chemistry he has with Brian and Roger...it can't be expressed with words!!
