Just a tip to anyone who tries this recipe...If you want really glossy meringue batter don't add in all the sugar at once add it in parts. Nothing's wrong with adding all at once but if you want really glossy meringue batter just add bit by bit. The rest is your choice.

Those things always depend on what kind of stove you use, how high the heat is, how thick the bowl is, and so on. Better you use a digital sugar thermometer (not sure if they are called like this in English, sry). Not the thick one. Better if you can use it for the oven too, so you have one for all purpose. They are not expensive. You can get a good one for 20$ or below. :) ( something like this : amzn.to/2AbgSPY but not that one from amazon. because it is no good. better if you buy it in a good shop or a good online shop)

merengue weeping can mean one of 2 things: either the egg and sugar mixture was over-mixed and the egg white protein bonds became too tight, forcing out moisture, or the merengue was under-baked. Troubleshooting tips: Avoid over-mixing when whipping egg whites, once they reach desired consistency stop. Increase the sugar amount by a few tablespoons. Also try adding 1 teaspoon per eggwhite of corn starch when mixing to help the eggwhite from being overmixed. You can also try baking the merengue for longer, your oven may not be getting as hot as you are setting to.
