We make the same thing but we not directly added ash so we purify it's with water and called it piila and I love Sichuan pepper and chutney... love from Arunachal Pradesh

chatney looks so tasty l never knew that fresh bambooshoot can be made chatney. cooking style is almost same like us Garo only the kar made out of ashes is different , we use to sook in water and filter it not directly mix ashes anyway love to learn your recipe of fresh bambooshoot. thanks a lot.

Nice. 👍 This is my favorite bamboo shoot curry. I never miss to prepare this recipe during bamboo shoot season. Only difference is we take out the bamboo shoots, let the ash settle down and separate the water from the ash and cook in the same water. Smoke pork (fresh pork doesn't tastes good) can be added to enhance the taste. 🤤 If there is no smoke pork add salted dry fish and cornflour to make the gravy a bit thick. That too tastes great. And yeah Sichuan pepper is a must.👌☺️

M not sure...but I thnk we can... as cooking soda is alkali too like khar ..and one of the main reason adding khar is to lower the acidity of bamboo shoot so I think we can..but the taste may vary ..

Bdw its not scezuan pepper. This is mezenga seeds right. Both are close relatives. Scezuan pepper grows in frost prone areas. It's called yerma in tibetan. There is difference in taste too
Hey dear...I don't why it is gooseberry plant ....my mom said that our great grandparents made like this...I think Assamese people use banana peel and stems to make khar..yes ,I think we can use any lye...as its main purpose is to lower the acid in the bamboo shoot

I saw even some Assamese tribals like the Boros use it, and some Arunachalee tribes use it. Maybe it is a tradition that has been passed on from our southeast asian culture, i may be wrong. I think that's alkali. We call it Khar in Assam. Soda is also use in substitute of Khar. Idk I maybe wrong please correct me.
