    The traditional method where the sofrito, rice and chicken are cooked together is best.

    WHICH IS YOURS??
    Arroz con pollo means "Rice with Chicken" in Spanish. It is a classic dish of Spain and Latin America, with many different traditional ways to prepare it, unique to various countries.

    "Arroz con Pollo"Peruvian Recipe
    INGREDIENTS:
    • 6 pieces of chicken
    • 1 k rice
    • 1 cup blended coriander
    • 1 cup tender corn kernels
    • 1 cup diced carrot
    • 1 julienned medium red bell pepper
    • 1 cup fresh peas
    • 1 cup minced onion
    • 1 tablespoon grated garlic
    • 2 tablespoons "Pasta de Ají Amarillo" (Peruvian yellow hot pepper paste)
    • 1 slice "Zapallito Loche" (a type of Peruvian squash)
    • ½ teaspoon cumin
    • ½ teaspoon pepper
    • 1 cup black beer
    • Vegetal oil
    • Salt to taste

    I’m not familiar with the seasonings she is using. I think it’s 👉🏻Bijol. It replaces saffron. What’s in it? Corn flour, cumin, annatto, yellow no 5 and red no 40. 👉🏻Goya Adobo All-Purpose Seasoning. She does not specify which, but it looks like she's using “without pepper” variety. Plus she says that she 👉🏻added chili flakes, onion powder and garlic powder. 👉🏻Sazón Goya. Again, she does not specify which flavor packet she is using. But looking at the box in the video, I think she’s using Sazón with Coriander & Annatto.
    You should be able to find them all at stores that sell products specifically for Latino cuisine. Or make your own seasonings. I have seen Goya products at Walmart.
    There’s nothing particularly special about "Rice with Chicken" or Arroz con Pollo. Everyone and every culture seems to have their own version of it, from what I've experienced personally. Even within cultures, regions differ in taste and availability of ingredients. An aromatic base of sautéed onion and garlic differs as well. My husband is from Costa Rica, and his mom does not ‘color’ her rice nor use any of these seasoning packets. She also does not bake the chicken. Her recipe is similar to the non-spicy American version with peas and carrots.

    What is in the spice blends? What would be good substitutes if you cannot find certain ingredients, e.g., Manzanilla olives or the Goya seasoning? What is the history of the dish and from where does it originate? Who made it popular?

    Puerto Rican Rice con Pollo my mom cooks chicken in with Rice and sofrito so good she is 95 years old makes the best rice

    Sorry to say but this is not the traditional way to cook Puerto Rican rice with chicken. So many items are missing for example the recaito, sweet peppers, etc. Also the procedure used to cook this meal is not the traditional way used by our ancestors. Thumbs down
