Vietnamese Broken Rice
Grilled Pork for Broken Rice
Ingredients:
4-5 lbs thin-sliced pork shoulder
[Marinade]
200ml water
8 tablespoons sugar
2.5 tablespoons kosher salt
1.5 teaspoons msg
2 tablespoons honey
2 tablespoons oyster sauce
2 tablespoons fish sauce
3 tablespoons shallots
3 tablespoons lemon grass
5 large garlic cloves
1 teaspoon 5 spice powder
Instructions:
1. In a blender, combine the ingredients for the marinade and blend until smooth.
2. Transfer the marinade to the pork shoulder and mix well.
3. Allow the pork to marinate for 1 hour in the refrigerator, or preferably overnight.
4. When you are ready to serve, grill the marinated pork on a grill until it is cooked through.

Thank you 🙏🏾 for this upload - I have always loved this dish - was basically only thing I would order as a teenager - or crispy skin chicken on rice - but mostly “com tum” - although lately - I have been eating “cooked beef 🍲 pho” - was not always a fan of pho - but now I could eat it for any time of the day - breakfast, lunch or dinner - especially on a cold day - I am thinking about trying to make it at home - I tried with a pho stock but the flavour was lacking - I really like full flavoured dishes - so the stock needed extra ginger and spices - the basic spice elements I understand - just a matter of putting the practice of making the broth as it can be a 24hour process - something I have never attempted - some people say it is just better to go buy pho 🍲 from restaurant that specialise - although that can be expensive - in Australia - pho at a restaurant is approx $16-21 .. “gam un” - 😆 thank you 🙏🏾

My local grocery doesn't have lemongrass....where can I get it as I'm taking up cooking again after years of being sick.....my mil can't have salt due to chf at a young age so substitute suggestions please for salt and msg(other flavour enhancements?) . I'm not allowed to drive( registered heartbeats of 200-380 beats per minute plus seizures. Otherwise I'd hop in the car and explore.

@@bessevaraven859 How is there even possible? Lemongrass are quite commonly used in Asia. Hmmm…Maybe try your local Mexican and Indian grocery store. If you can’t find any. I guess your only choice is to search “Lemongrass near me” on Google.

Fish sauce. But not straight up fish sauce you can google many recipes. Usually water, fish sauce, sugar, lime (or vinegar). Garlic n Chillis 🌶 if preferred
