I should send you some Scrapple. It's a South Eastern Pennsylvania breakfast meat staple here! Most of us here prefer it over bacon. Don't get me wrong, bacon is amazing but we love our scrapple and eggs for Breakfast. But it has to be cooked perfectly. Crispy on the outside and mushy on the inside. It puts a lot of people off when they read the ingredients. But I say don't knock it until you try it.

Believe it or not, the absolute best omelets I've ever had were in the US Air Force chow halls.

I know it’s the restaurant and the owner that made or want it like that. To me it doesn’t look good at all just by looking at it. And for you you’re a pro you do it so easy and in a calm pace. I work in a cafe and pizza place I don’t like it when tags start coming and the line is full of tags and waitress if coming back and forth asking how long and where this and that I tend to stress and don’t know where I am.
