How To Make Japanese BBQ Sauce | 2 Versions

- I got so many requests to figure out how to make this sauce and I HAVE NAILED IT! This sauce is sweet, salty and a little tangy with just the right amount of garlic and ginger. Recipe's written below!

Japanese BBQ Sauce
1/2 cup soy sauce *
1/2 cup water
1/2 cup sugar
2 tbsp mirin
2 tsp tomato paste
2 tsp chopped green onion
1 tsp grated fresh ginger
1 tsp rice vinegar
1/2 tsp garlic grated
1/2 tsp toasted sesame oil
*If you want to make a gluten free version, use Tamari or a gluten-free soy sauce.
Blend ingredients together then bring to a boil on the stovetop and turn down to a simmer for 5 minutes. Let cool and enjoy!
Sugar-Free Version
3/4 cup water
1/2 cup soy sauce
6 dates
2 tbsp rice vinegar
2 tsp green onion
2 tsp tomato paste
2 tsp toasted sesame oil
1 tsp garlic grated
1 tsp ginger

Silken tofu blended works well for a sandwich spread, if you add some seasonings

I was going to ask about this. Korean bulgogi sauce uses Asian pear for sweetness. Cool to hear apples worked. What variety did you use?

Can you answer my question, is it true that mirin is supposed to be naturally sweet without added sugar? All brands in the Asian stores in Seattle contain sugar or high-fructose corn syrup. The only one I've found that's just "water, organic rice, sea salt, koji" is Eden Mirin at Whole Foods ("product of Japan"), the one Derek is using. Do most mirins in Japan have sugar, or not?
It’s true.
However, it is called hon-mirin, and most of the other types contain sugar and additives.

Would love it if you would demo orange sauce or how to make a vegan version of orange chicken without mushrooms.
Also a sweet and sour sauce to drizzle over veggie stir fry would be great.

It's everywhere where i am in the States but expensive for a much smaller bottle than the one you were holding. Thank you bc we use this sauce on soy curls when making poke bowls. It's really good and the healthier option is perfect! 10/10!

this is great! and if u dont wanna blend up dates you can always try maple syrup ;) I love a good maple note in asian sauces with garlic and ginger it just is so good to me!

DEREK! I found a date syrup at Costco the other day! You can obvi use whole dates like you did in your recipe but I know a syrup can come in handy! It’s literally JUST 100% organic dates in syrup form! Keep your eye out for it! It’ll likely disappear just like this sauce did but.. worth a go anyway!😍

So way back when I was first cooking asian dishes, I couldn't figure out why my teriyaki sauce didn't taste more like takeout. Then I discovered mirin and that really made a big difference. It is a bit pricey, but it has become an important addition to many of my asian-inspired sauces.

Mirin substitute - medium sherry works great in all asian food - it is sweeter and heavier than sake.

In Seattle I get it at Costco but I've seen it at a couple other stores. I bought it for a while but then stopped in order to focus on less-processed sauces (soy sauce). I make a comparable flavoring with 1 unit of mirin, 1 of rice vinegar, and 2 of soy sauce, but of course it doesn't have all the nuances of the flavor.
Going to make this and then use it as a binder on my smoked meats.
We love your vids. As far as the Japanese BBQ Sauce - well we can't even get it here in Australia. We will definitely be giving your version a try.

Hey I did try this and it turned out great! There is a dressing/dip/sauce that I cannot get where I live and I’m wondering if maybe one day you could give this one a shot and try to remake? It’s called Umami crave the fifth curried maple

By the way Trader Joe’s soy chorizo makes an amazing chili just sauté up some onions, peppers add a can of fire roasted tomatoes and some kidney beans.

1:42 you can substitute mirin with
a cheap medium sherry. Personally I don't care for the sweetness of mirin and use chardonnay instead.
Oh my gosh too funny you read my mind. I was in Costco last night and I was going to buy this because I've seen you use it in your videos but I did not like all the sugar in it. So I took a picture of the ingredients and was going to make my own healthy version this weekend. Now since you mastered it I will just follow yours.

Speaking of yum, have you ever had Cafe Yumm’s Yumm sauce? You can get it in Cafe Yumm & select grocery stores in the PNW US. So good - that would be a great one to deconstruct.
In addition to this I’d love to see a vegan ‘Yum Yum’ sauce. Tangy mayo like condiment to drizzle on Asian foods (or any food!)
Awesome! I love this sauce 🤤 I’ve actually been wanting to ask if you could make a healthier “firecracker sauce”. I love it but it’s got 1/2 cup brown sugar in it. Thx in advance! (Recipe below)
1/2cup brown sugar
1/4 Buffalo sauce
2tbs rice vinegar
1tbs crushed red pepper
1tbs garlic powder
1tbs ginger powder
Salt & pepper (there’s no measurements I just sprinkle some of both in haha)
Can you maybe show some substitutes using umme plum for tart/ acid. I am allergic to vinegar and lemon juice doesn’t always sub. Maybe a paste to add to sauces? Super healthy!
