Buttercream Palette Knife Flower Practice

  • My previous videos focusing on palette knife flowers have been getting so much love I wanted to share one more! I think this version of my practice video is a bit slower paced and more clear than my previous video, so I hope it is helpful to everyone trying to learn and practice this technique. I too am learning and practicing as I go, and the more I experiment, the more I hope to be able to share with you all in the future.
    *My recipe for buttercream that I like to use for this technique is an all egg white Italian Meringue buttercream:
    180g large egg whites
    200 g white granulated sugar
    80g water
    450g unsalted butter, room temperature
    1 tsp extract or flavoring
    Method: Heat the sugar and water to 118C while beginning to whip your egg whites. Stream in the sugar after it has reached 118C into the whites and whip on high until they have cooled from hot to warm and are fluffy. Turn the speed to medium and add in small amounts of butter at a time and finally the flavoring at the end.

    Thank you for this video. Most don't show how they load buttercream onto the palette knife. Yours really teaches those trying to learn how. I hope you can also include footage from the top (top view) while you are laying petals onto the surface in future videos. 🙏🏻

    Your technique is awesome! The only suggestion I would have for the next time is to color the icing. It is hard to see on the video, especially on white foam. Other than that, great video with relaxing music.

    hi.. 1st time watching ur video.. really nice.. thank you 4 making this . its easy to make the petals if room is cold / switch on aircond right? i really wanted to try but my kitchen area is hot.. instead my bedroom only hve aircond.. 😔

    Beautiful! Just a lil hard to see the white flower in the white block ... but this best tutorial I have seen on this type of decorating !

    Thank you so much for details tutorial. I am practicing this technic too, but the problem I am facing is, my smbc become soft quickly. What should be the room temperature for doing this technic? Any tips how can I solve the problem?

      Thank you! Just put it in your fridge for a few minutes if it starts getting soft. I keep my kitchen between 66-68 F at all times, and usually I don’t have any issues with my buttercream becoming too soft!

    It is beautiful but it will be more clearly to see if any of the butter cream or the foam is of different colour as both are white so it is difficult to see the details.

      I'm not exactly sure what you mean, but these flowers are the easiest to create when you are working in a cool temperature room--if it is warm you might have a harder time. If you are meaning using my recipe, just please give credit when you use it if you are re-publishing my content :)

    Hi, I am trying this and my petals look bulky, not thin and fanned out like yours. Also, with buttercream made from egg whites, how long can it stay at room temperature?

      Lori Goedken my first suggestion would be to spread your buttercream thinner, and take smaller portions up at a time with your palette knife. Most chefs will leave their buttercream out overnight or possibly two days if you live in a cool place with low humidity. Otherwise refrigerate it and pull it out a couple hours before you need it :)

      Seyha Shop you should be able to order them online, particularly from any specialty chef or pastry online shop! I bought mine in Korea but I’m sure even amazon would sell them
