Do you really need to remove the old coal? Surely there's no mould on it? And it will burn off anyway

Do you need to? No. BUT it is incredibly likely that IF you have mold in your grill it has sat for a long period of time. That mold grows in an environment that is wet or has residual moisture as well as bits of food the mold grows on. Because of this, any old charcoal is not going to burn as effectively. So we remove all old coal so we have a hot clean burn and have no moist coal that will cool down or at least slow down the burning process.
