I have heard of people doing that, just to make the process/start of the pizza cook a little easier. I think folk that do tend to finish the pizza off the screen near the end just firm up the base. Maybe worth some trial and error! I've not yet tried to cook with the screen, I just rest it there after the cook.

Homemade Neapolitan Pizza that’s amazing, thank you! The Biga recipe worked out quite well in my home oven, probably my favourite base so far. Quite a hydrated dough, but worth the hassle to work with 👍
Great videos, As a "newbe" to this type of cooking (but an expert at eating pizza) what type of oven would you suggest to start off with. gas or wood, I was looking at the Ooni Fyra but been watching the videos for the 16 I am rubbish at BBQ's but am a pretty good cook who follows recipes. Thanks
Gas is pretty much plug in and play, and I’ve always been attracted to that convenience. Wood fires need to be maintained and watched, so hence why I’ve only got gas ovens. However, I just took delivery of a wood pellet oven so I’m sure I’ll make a video of my first use sometime down the line!
It's a heavy duty K5PM5, great mixer but some KitchenAid's don't come with a spiral dough hook, just a C shape, so I bought that separately. Also, some of the cheaper KA models have plastic cogs/insides, so get one with metal and it'll never burn out. Expensive kit, but I know it'll handle the dough with ease.
