I’m thinking more fillings: sautéed mushroom with thyme and shallots or potato/feta cheese/scallions or beef/tomato/basil or apricot in small pieces cooked with replacement sugar and pistachios, or mixed berries cooked down with replacement sugar and hazelnuts or apples cooked down with replacement sugar and cinnamon and a few raisins… in France they’re called Chaussons and my grandmother used to make many versions. Those look great! They look a lot like the perogi my family makes at Christmas. I am not a fan of almond flour though, no matter how much I process it, when baked it is still very grainy. That being said, you could do this with a sauerkraut filling or a cheese filling. There is also fruit filling too! OMG I will have to try it. You did it again! Thank you.

Congratulations on yet another wonderful recipe. I made cauliflower samosas with the dough and they were very delicious with great texture. I will definitely revisit this recipe the next time I make keto patties. Also, I made a few tester gnocchi with some of the leftover dough with good results. The dough did not fall apart when boiled! 🤗

Hi @ketoserts , couldn’t resist and made those right away . Sadly the dough separated when rolled out . Spent half day to pinch it together. Measured the ingredients exactly by weight and not cups , followed religiously but the dough separating part was so frustrating. Can u please guide 🙏

I need you to cook for me!, I love empanadas, but is so much work, I used to buy the pastry already made before and you just fill in and fry, but know on keto I do not know how to make the pastry, I always make it so bad, it crumbles it doesn’t hold, is not like yours

If you are not allergic to peanuts you could substitute Lupin flour. The carb content will also be low but it's on the pricey side good luck.

I already used vwg so no need to use psyllium. Also psyllium will make your empanadas goeey and will give the bread like texture.

Can’t you deep fry them without baking them?
There are two different ways of doing this. Method 1 is baked. Method 2 is deep fried. See the instructions. 😉
