Because you need to put two resistors there, where were the rotating resistor.
This video is a bullshit, don't know how it is supposed to work. If u take out the potentiometer out the board tries to find the neutral point, that's why your DIY ESC doesn't work.
Solving: take out the potentiometer, you got 3 pads, just solder between the 3 pads two resistor 100ohm. It should work, but if no, just look at uncle Google and find a solution for the resistance.
