My advice, you should try chancaca, it is sopaipilla with zugar cane, it is an actual brand name too, I used to eat it as a kid in Chile, forty years ago. It comes in a sugar brick form. Some spice was added for extra flavor but I forget what it was. At least give it a try. Street vendors might sell it. About the marraqueta, I found this. History of Chilean Marraqueta. Many historians agree that the marraqueta originated in Valparaíso, Chile, in the late 19th and early 20th centuries, when major Chilean ports such as Valparaíso and Talcahuano received thousands of European immigrants. ... It is widely considered the quintessential Chilean staple food. You should try the marraqueta toasted with butter and jam (Watts), I think it tastes better. Also when I was a kid we used to eat locos, with mayonnaise or with lemon juice, they over fished them and now they still have them but are expensive. Also the Chilean payaya which is cooked is pretty nice, they are much smaller in size than the normal ones, expensive too but worth the try. My favorite dish in Chile was the paella a la Valenciana, which is spanish, but my grandmother cooked it very well, they might have it on the streets, it is a paella with shell fish, sausages, and other things. When cooked right the paella is amazing and Jaiba, or stone crab is also pretty good too. Also when I was a kid my mother used to cook zucchinis cut in half with the middle scooped up and put back afterwards with cheese, I believe, they were amazing too. Next time you eat humitas try to put some sugar or tomatoe on it (or both, why not?), it'll taste delicious! Also, don't eat them cold because you're going to get stomach ache if you do it. Or at least that's what my mom always says.

I'm so glad you liked sopaipillas and mote con huesillo. When I meet a foreigner that doesn't like either sopaipillas or mote con huesillo I just ask them politely to leave the country. Ps: real sopaipilla dough have zapallo (a type of pumpkin). Most street sopaipillas have artificial colour and other stuff instead to make them cheaper. You SHOULD try sopaipillas with pebre. Although they're sometimes also eaten sweet, dunkin' them in chancaca (liquified brown sugar) Ps 2: What your friend ate was an "AS" (spanish for "ACE"), which is basically the same concept of a hot-dog with meat instead of a sausage, and varying ingredients on top of that. NOT to be confused with "sanguche de potito", which means literally "ass sandwich", but I'll let yourself to read more into that one.

según entiendo la marraqueta se le llama así en la zona central , hacia el norte y en valparaiso ( dónde se origina por unos panaderos franceses de apellido marraquette ) es pan batido y hacia el sur es pan francés...
Acá en Linares siempre le hemos dicho "pan francés", sólo con la llegada del tv cable y la internet supimos que tenía otros nombres, ahora algunos le llaman marraqueta y otros incluso pan batido. Yo le sigo diciendo pan francés, tal como en mi niñez.

As like ace up your sleeve. It's a variation of a completo. In the 90' a guy who used to sell street food in Santiago run out of frica bread (bread use to make churrasco). Since his clients (taxi drivers and students) kept asking him for churrasco he had the idea to sell it in a completo bread. He said it was his as bajo la manga (Ace up your sleeve) that's why it has that name.
This makes my mouth water. I am suffering right now. Here where I am actually living is difficult to find those deliciousness I used to eat them when I lived in Chile. You are lucky. I could die for empanadas. Best food ever. My favorite number 1. The rest is awsome too. 😪😪

según entiendo la marraqueta se le llama así en la zona central , hacia el norte y en valparaiso ( dónde se origina por unos panaderos franceses de apellido marraquette ) es pan batido y hacia el sur es pan francés...
Acá en Linares siempre le hemos dicho "pan francés", sólo con la llegada del tv cable y la internet supimos que tenía otros nombres, ahora algunos le llaman marraqueta y otros incluso pan batido. Yo le sigo diciendo pan francés, tal como en mi niñez.

As like ace up your sleeve. It's a variation of a completo. In the 90' a guy who used to sell street food in Santiago run out of frica bread (bread use to make churrasco). Since his clients (taxi drivers and students) kept asking him for churrasco he had the idea to sell it in a completo bread. He said it was his as bajo la manga (Ace up your sleeve) that's why it has that name.
