Hello from Ecuador, South América. We have a similar sauce that yours but the difference is that we add a cup of coconut cream. You can try to this variant of crawfish sauce.
Tried this tonight over blackened catfish, came out great. I used KFred instead of old bay, half and half instead of heavy cream (store was out), and also threw in some green onion to add a bit more color, though I think some chopped parsley would work well too
Forgot to mention we also make crawfish etoufee and cover or fried, broiled or grilled catfish the same way with a bed of seasoned rice on the side and garnish with paprika and a few shakes of parley. It's called Catfish Campti.Its 💯!!!

How is the texture on the crawfish? Just curious because I want to try this but know that crawfish cooks really fast so having sautéed it and then boiling it to reduce for a while I'd assume it would overcook it? I'm definitely no expert on crawfish which is why I'm asking. It looks great though and I'll definitely have to try making it at some point I guess I was just wondering if it would be better to add the crawfish last or if you'd lose too much of the flavor?

I’m from Nola and yup I add mines at the end because tails are already cooked 😊but his dish looked good. You should definitely try but don’t forget to add that holy trinity
OMG, that looks amazing! I miss honest southern food. Simple, tasty, not fancy. Just stick-to-your-bones fabulous. I'm an Oregon transplant from the south and even our Cracker Barrel restaurants closed because they didn't understand southern cooking. Grits weren't right, biscuits weren't right, greens weren't right (soggy and tasteless, like canned spinach), and the worst? Gravy wasn't right. they added sausage (really?) without any salt or pepper. All I want for gravy is pepper gravy. Don't add sausage. Just a great pepper gravy. You'd think a chain restaurant would be consistent, but it's not. I ate Cracker Barrel in TN and it was wildly different than here in Oregon. Ugh. DId I hear that you used Swai with cornmeal coating? I think I would have seasoned the cornmeal a bit with salt, pepper, and cayenne ... possibly a powdered garlic and some dried parsley, but that's just me. Swai is a catfish, after all. It stands well on it's own. Looks totally delish. thanks for sharing.

I did the same with half and half added a bit of green onions but I did use old bay seasoning
