The fact that there is no pork, means it is probably made with cream because no pork means no grease from it, which is base with the eggs and the starch from the cooking water for making the carbonara souce. So, at best, that is "white" carbonara as it is called sometimes. So, as Yoda used to say, carbonara it is not.

But these are elders born in the church over 40_60 years. They know their health and deep focused and prayer. With only minimal sips of water of Apple juice perhaps. No food, day or night. Carbonara actually is a pretty recent dish, it comes from post World War 2 Italy when the most abundant foods were many times the bacon and eggs fed to victorious American soldiers, and the normal Italian ingredients were not available. The Italian people used the bacon and eggs, along with flour, to make a filling pasta dish for themselves.

From the Wiki. I’m not Italian and Wiki is frequently wrong, so it may be a mix of both. This the story I was told by Chef last time Carbonara was a special in the restaurant.
“The carbonara name is first attested in 1950, when it was described in the Italian newspaper La Stampa as a dish sought by American officers after the Allied liberation of Rome in 1944. It was described as a "Roman dish" at a time when many Italians were eating eggs and bacon supplied by troops from the United States. “

I've been watching your videos for a year now and just by looking at Chaudhary's face I'm CERTAIN that he DID NOT LIKE THE CARBONARA PASTA. Please don't influence them to say that every dish is good. The italiens won't be offended. Worst come to worst the italians will tell you that you did not use the authentic receipy (which would be true).
Authenticity is the key factor to your videos and as Asa S says, you should also tell them that in the western world we eat Carbonara with porc but because they are Muslims you modified the reciepy from pork to beef.

Well... They aren't eat the real Spaghetti alla Carbonara because the real are are made with guanciale di maiale (is a part of the pork, no go for muslims), egg, black pepper.
Some people add cheese or cream... Nope nope.
For those wanna try: cook the spaghetti, meanwhile in a pan, brown with oil some pork cheek cut in small dice.
After the spaghetti are cooked al dente, throw away the water, then eturn the spaghetti to the pot, put it the browned pork cheek, add some olive oil, pepper and a raw egg, mix and serve bevore the egg is totally cooked (it need be slighly liquid).
This is the real Spaghetti alla Carbonara 😋😋😋
For muslim people can be used the sheep sausage instead the pork cheek, is yummy too 😋

Hmm. What you have there is not a carbonara. I understand they cannot eat pork, but using another meat entirely changes the dish. Plus, it looks like the chef may have used cream, and there is NO cream in carbonara. The sauce is solely made from the egg, which is cooked veeery slowly so it doesn't curdle.
