🇵🇪PARIHUELA MIXTA - MIXED PARIHUELA: In a pot, add butter, secret sauce, chilcano (fish head soup), salt, Ajinomoto, pepper, cumin, oregano, yellow pepper, red pepper, mahi mahi, cilantro, black beer, crab and cover for 3 minutes. Remove the mahi-mahi, then add a mixture of seafood and bring to boil: scallops, shrimp, squid, clams, mussels. Add cornstarch, milk and secret sauce, then mix. In a plate, place fish, and add the seafood soup mixture. Top with crab, seaweed, and pepper. Add cheese stick and garnishes. Serve with purple corn juice.

🇵🇪DEEP-FRIED PARROTFISH: Score the fish and add fish broth and a secret sauce. Coat in flour and place in the fryer for 7 minutes.
🇵🇪TIRADITO: Filet the parrotfish on both sides and then cut it into sashimi strips. Cover it with “sudado” sauce made with tomato, onions. Then garnish with yucca, seaweed, chilis and cilantro.

CEVICHE CON ARROZ CON MARISCOS (CEVICHE WITH RICE WITH SEAFOOD): Ceviche: Chop the mahi mahi in small cubes. In a bowl, add the cubes, Ajinomoto (MSG), salt and aji Limo. Mix with a spoon and add garlic, celery, kión (ginger), cilantro, lime juice and white pepper. | Arroz con mariscos: Sauté the mix of seafood for a few minutes. In the same pan, prepare an aderezo with the onion, garlic, tomato, paprika, panca chili, and yellow chili. Add fish broth and salt. Add the cooked rice and stir. Add red bell pepper and peas, pour the milk cream, and integrate it carefully. Finish by adding cilantro and Parmesan cheese.

I had some Peruvian friends when I lived in Vegas years ago and the food they made was outstanding. I'm from a very conservative family and branching out to eat things like tongue was a stretch but once I did, the whole world seemed much brighter.
You should try the Peruvian lamb head broth. It is a delicacy for a winter or powerful breakfast

Growing up Mexican I thought we had the best food in the world. But then I met Peruvians and wow! Let me tell you it opened a whole new world of flavors! Love the Peruvian culture and their ways of being. You should look into the Bolivian cuisine they have some real tasty foods as well! Love the channel!

No no para nada ando asiendo comparaciones!😃yo soy mexicano nacido en Estados Unidos y mis padres me criaron con todas sus tradiciones, y yo amo esas tradiciones y la comida mexicana, pos claro es reconocida por todo el mundo por su sabrosura. Y siempre me da nostalgia cuando pruebo comidas que me preparaba mi ama con tanto amor. Y cuando visito Mexico uffff!! No se diga!!! Pura sabrosura ( igual que sus mujeres ☺️) pero también ay que explorar y disfrutar de todo el mundo. Ese cuate es lo que está asiendo. No se limita con nomas un platio, pero explora por todo el mundo para probar lo que cada cultura ofrece. No ay nada mal en eso? Yo nomas hice el comentario de que la comida peruana es riquísima igual que las otras naciones. Tengo esa dicha de vivir en un lugar donde muchas culturas se juntan y dan el mejor platio que tienen. La neta que si!! Todas las culturas del mundo tienen algo especial en sus platios.

@@halloweenever eso si que reconozco, cuando voy por Mexico y como las comidas por aya en serio mis respetos. Se anota la frescura en las carnes. Pero de donde yo soy Los Ángeles CA. USA ay mucha gente Mexicana y la neta puedo decir que se está viendo el mismo sazón que por aya. Claro todavía le ase falta pero cuando vienen familiares de otros estados y piden que los llevemos a comer comida mexicana en las camionetas de loncherías, pues dice mucho de lo que ay por acá.

Es puro chauvinismo e ignorancia creer que la cocina del país en que nacemos es la mejor del mundo cuando no hemos probado la de otros países. La comida mexicana a mí me gusta, pero es terriblemente monótona y predecible no importa en qué parte de méxico estés, ya sabes que la comida siempre tendrá tortillas de maíz, palta o aguacate, tomates y chiles, así que básicamente se trata de una cocina aborigen y que ha evolucionado muy poco y que carece de diversidad. En cambio la cocina peruana es la fusión de 4 continentes, climas, pisos altitudinales y técnicas variadas que México no tiene, y ESTO ES UN HECHO, NO UNA OPINIÓN. Como lo pudo comprobar el mismo Sonny al señalar que es difícil hacerse una idea de qué es la gastronomía peruana porque es demasiado diversa. A lo mejor no entiendes inglés y no lo advertiste.

Yay! 10 million! It's so satisfying to look back and see how much Sonny and BEFRW team has improved and conquered. My favorite documentary channel for sure. Got to know it on 2020 and binge watched the content until nowadays. Learned so much from so many different cultures! And here we are with another amazing video, Peruvian food looks so tasty and flavorful and fresh!
Oro is great and a perfect fit for all your coverage of Latin America. Being Cuban he has a good accent for universal understanding amongst Spanish speakers, something not said of some south american accents [further south than Peru]... But also Cuba is so different than much of Latin America, so can tell he is very much enjoying all the new stuff same as Sonny.
I have lived in Miami for 7 years it was very hard and difficult to understand Cubans to me and many people from South America that I know. But seems that OROs Spanish ascent it's very understanding.
Peru has the best food, their diversity is impressive.

I’ve been to Peru before and my last trip to Arequipa I found a restaurant right in the town square that had lots of seafood and the salmon dish they had was wonderful.

3:03 this white liqued resulted of processing fish with lime is called "Leche de Tigre" which means Tiger Milk. It is amazing and it is used in other types of ceviche as the main liquid with no additions.
As a Nigerian, seeing all this sea food makes me think of preparing seafood okra soup and pounded yam😋😁

We have a similar dish called "umai" back in my hometown Sarawak, where the Melanau (one of the indigenous groups in Borneo) also use lime to cure raw fish, paired with onions and other spices.
I dove with parrot fish in Cozumel. They peck at the Coral and make a very distinctive sound underwater

I just discovered the channel and I have to say it's already my favorite one. Sonny is funny and considerate towards the cultures he's exploring. Really love this episode due to the mahi (dolphin) we use it in Trinidad and Tobago for fish broth, love the texture plus the Caribbean flavor makes it better but off this video their flavors an skills preparing it is more interesting, bet it really taste good for real
