    Dum ka Qeema
    Ingredients:
    1 onion, finely sliced
    ½ cup oil
    1 kg beef mince
    1 cup yoghurt
    4 tablespoons chickpea flour (besan)
    2 tablespoons ginger-garlic paste
    Green chillies (to taste)
    Fresh coriander (to taste)
    Spices:
    2 tablespoons cumin seeds
    2½ tablespoons coriander seeds
    2 whole red chillies
    ½ tablespoons whole black pepper
    4-5 black cardamoms6-7 green cardamoms
    Salt (to taste)
    Procedure
    Heat a pan and add half a cup of oil. Once the oil is hot, add one finely sliced onion and cook until it is caramelized and golden brown. Add 1 kg of beef mince and cook it until the colour changes. Then, add 2 tablespoons of ginger-garlic paste and continue cooking until the raw smell disappears. Next, add ground spices: 2 tablespoons cumin seeds, 2½ tablespoons coriander seeds , 2 whole red chillies, 1½ tablespoons whole black pepper, 4-5 black cardamoms, 6-7 green cardamoms, and salt to taste. Add 4 tablespoons of chickpea flour (besan) and mix everything well. Pour in 1 cup of yoghurt and cook until the yoghurt is fully absorbed and its white colour fades, continuing until the oil starts to separate from the masala. After that, add 2 cups of water, cover the pan, and let it simmer for 20 minutes. For an optional smoky flavour, give it a smoke by heating charcoal and placing it in the pot for a few minutes before covering it. Finally, dish out and serve hot with chutney and parathas.
