I haven't grown from seed yet but I plan to gather some seeds this year from my own dahlias and I will grow these next year - it's always a lottery whether you like the resulting flower from the seeds because you never know what you're going to get (dahlias don't come true from seed). Apparently there are more duds than beauties but I think I'd like to give it a go!
Hi, you can if you really want to but it shouldn't be necessary. By pinching, you are removing the apical dominance of that first shoot and this will make all the other nodes further down the stem begin to shoot.

Can you pinch a Dahlia more than once? IE: pinch the new shoots after they have grown a few leaves
