I have 2 questions please.
1. Can you share a video of the completely done by the bread machine version of your bread.
2. You use 6 varieties of flour in this recipe. Can you give a recipe which uses a fewer easily available flour. What I’m looking for is an eggless 100% whole wheat bread. I don’t mind rice flour or corn flour. Also at the place where I live, a lot of the flours you mentioned aren’t available easily.

The reason the bread sinks towards the end of the baking process is because the yeast became too active during the bread making process. The main reason this happens is the the liquid was too warm when you started. Luke warm liquid or lower the next time you try your recipe should fix the problem.
This looks yummy! I will give it a try in my bread machine on the GF setting. I actually remove my paddle once the mixing stage is finished so I don’t get that big ol’ paddle hole in the bottom and my gluten free setting does a decent job of mixing, I use a rubber spatula to make sure any dry bits on the side get mixed well. Love your channel, you do such a great job explaining what you are trying out!

Thanks so much for this. Wondering, would it be OK to use King Arthur gluten-free all purpose or bread flour? Or should I just use almond flour? Also, can I use honey instead of coconut palm sugar?
Hi! Using an all-purpose gluten-free flour mix could work, but I haven't tested this variation as of yet. In the next month, I plan to create a whole new bunch of videos to help with this exact scenario. And yes, it's okay to use honey for the little bit of sugar in the recipe. Depending on the bread machine you have, you can use the GF setting or simply use any setting to mix the dough for a few minutes (5 is often enough), let the dough rise for 30-60 minutes with the machine turned off or on the ferment setting and then use the BAKE only setting to bake for 1:10 to 1:20. Hi Fresh is Real. So happy I found your channel. I’m stuck. Trying to make a vegan, gluten free and yeast free bread in my Zo bread machine. The vegan and gluten free is more easy to work around but the yeast free has been a challenge. Thanks for your help.
Hi Maria! I'm happy that you've found my recipes! Did you see the yeast-free bread recipe on the blog? It's also GF and vegan. Here's the video for that recipe: ruclips.net/video/AseIvtin6Sg/видео.html You should be able to bake the yeast-free loaf in your bread machine. Consider using your bread maker to only bake the bread at first then play around with other settings to mix and bake.

First, I love, love, LOVE, your videos and recipes. You have me making my first sourdough starter, and I'm baking bread for our dinner every evening. Your talents at developing gluten-free vegan recipes are astonishing. No weird ingredients, and every recipe I've made so far is delicious.
I do have a question please: The loaf on the far right is much higher, and its air holes are much larger than the other two loaves. Is this due to the higher amount of water, or some other variable? This is the kind of loaf I would love to produce, and I miss so very much since going gluten-free.

Thank you so much for taking the time to let me know! It means a lot! Which GF flour did you decide to make your starter with? Brown rice? Which bread recipe is your favourite? As for your question about the larger holes in one of the loaves, in this case, if I remember correctly it was just playing around with the overall amount of liquid. That one had a bit more but I think it also felt a little sticky. So if you feel like experimenting, add just a tad more water or plant milk and see how it goes for you. Even the difference in seasons, the temperature in our kitchens, the ingredients we use, etc. can all affect the outcome of a gluten-free and egg-free loaf. Take notes if you do bake often and jot down what works best for you. That way you can recreate it if you ever concoct the most magical loaf ;)
I was interested in this too. I'm pretty sure Chantal said that the one on the right was the one she made using the 'whole wheat' setting on the machine! I am very keen to try this out too. I think the machines do a great job of mixing the ingredients if you scrape down the sides once or twice.
Hi Chantal. First of all, thank you very much for your hard work and sharing! See if your bread machine has a custom setting where you can set the time for kneading, rising and baking. You can take your whole wheat setting as a base and increase baking time. My machine beeps before rising stage to give an opportunity to remove the paddle so the baked bread has a smaller hole. I am hooked on GF SD breads so would be interested in a bread machine version. I guess custom program could be adjusted there as well. Is the temperature for rising the same for yeast bread and SD bread? I usually proof SD at room temperature...

Question:
I came here from the buckwheat sourdough post and have learned how to make a starter. Do you not use that starter for this? Is it because it is sour? Or could you spread some on parchment and dry it out and use it for other breads?
Another, what is the difference between sourdough and this bread? Is it the starter that is sour?

Hi Jenn! You're in the right place to learn if you love GF vegan baking! If a recipe includes wild yeast (a GF sourdough starter), I will always include the word sourdough in the title. If you see the ingredient Active Dry Yeast in a recipe, the bread recipe calls for the commercial dry version (e.i. amzn.to/2W3BKmv) you can buy at the store or online. Many can't tolerate commercial yeast which is why they try the natural method of making wild yeast at home (aka sourdough starter). This bread machine loaf can definitely be transformed into a GFV sourdough loaf. I have notes somewhere so let me know if you're interested in that version of the recipe. As for the sourness… keeping your GF starter fed and happy will help with the sour smell and taste to the bread. I don't like it too sour myself, so I often pour out the surface liquid before I feed it again to get it lively. This is before including some starter to a recipe. There is also one step in the creation of a new starter where I suggest to remove some starter or surface liquid to reduce the sourness. I cut my completely cooled gf bread with serrated knife on top of the cooling rack. I can cut even slices using the tines of the rack to gauge the cuts!

Recipe looks great, but have not dug out my bread machine. I quit using it some years ago, since a double rise with gf not done. Have some wonderful elongated pans from Germany I use for baking gf. I get 16-18 slices for 2 pound loaf to cut down on carbs.
But do want to try the recipe

Hi, thank you for the wonderful recipe so clearly explained. The place where I live, I don’t get most of the flour so easily. I’d be grateful if you can share a recipe with whole wheat flour. The whole wheat we get here has lesser gluten content. I’m ok with psyllium husk, rice flour, corn flour. I’m also ok with dairy milk and yeast. What I m looking for is a whole wheat eggless bread. I have tried a couple of times, the whole wheat bread machine bread that made was tasty but the texture was not great.
If you can give me a recipe for a 199% whole wheat eggless bread recipe, that’d be amazing.

my machine doesn't have the 'bake only' setting. The best is 'quick bread'. How should I go about baking the gluten free bread?
Does the operating manual mention how long the quick bread setting bakes for? Have you ever made wheat-based loaves of bread with your machine?
@@FreshisReal the quick bread setting is 2 hours on my Panasonic SD-P104. I bake bread at least 4 times a week on this machine using bread flour which is high in gluten. I tried using Atta flour a few times but had to add vital wheat gluten and more yeast (on whole wheat setting) in order to bake a more decent looking bread, otherwise they turn out really dense, like rock.
What temperature should the bread machine be when making this loaf? I programmed it for 1H 10m and for a 350* temperature. Is that okay? Thanks!
That should work. Check the internal temperature at the 1 hr and 10-minute mark; if it has reached 210°F, it's ready. Add 10 more minutes of baking if it's not. Some machines can't bake for longer than 70 minutes.
Do you have the notes for me for the sourdough version?
You want to make a GF sourdough in your bread machine? You could take my latest recipe and use your bread machine to bake it. If you feel like experimenting on a 2nd loaf, play around with the settings on your machine for one that could mix, rise and bake your loaf. But please keep in mind that if your machine has a setting for GF it's not necessarily taking into consideration the differences with GF sourdough bread recipes. That's why I'm saying that it might be a little bit of an experiment to figure out the perfect settings. GF sourdough technically only has to rise once for 3 to 5 hours then bake. The regular sourdough settings on your machine might be designed for wheat-based recipes. All this to say, you can take the recent recipe and use your machine to rise (leave it off for this part) and then bake for 70 to 80 minutes. www.freshisreal.com/7-inch-sourdough-boule-gf-v/ Let me know if I can help answer any additional questions you might have.

fWhat temperature should the bread machine be set for?
Hi! Do you have the option to set the temperature? Lucky you! The baking temperature of most bread machines is around 350°F. This is why, on average, a smaller gluten-free loaf needs a minimum of 1hr10mins to bake. Longer is excellent, too, when possible. Larger gluten-free loaves might require longer baking times. Ideally, the internal temperature of the baked loaf should be 210°F once fully baked. In my bread machine cookbook, I developed GF bread recipes to be smaller than regular wheat-based loaves of bread. In the book, I suggest the settings to consider for each type of bread recipe (quick breads, yeasted, sourdough, etc.). Can you do all the process straight in the bread machine instead of doing mixing part out and then put it in the machine? I believe that will defeat the purpose of using the bread machine
