Rick Bayless Sopes: Street-Style Sopes

  • RECIPE 👉 www.rickbayles...
Quintessentially simple, perfectly made sopes-hot off the griddle-are about the best thing a person can eat. But like all street food, they can be a challenge to make indoors. First of all, you aren’t the vendor who’s made a reputation and livelihood by crafting thousands of sopes. Simple as they may look, the perfect pressing, baking and pinching takes practice. Plus, you won’t have the same equipment as the street vendor, and possibly not the same ingredients. That said, it’s worth plunging in and creating some deliciousness.
A lot of street food sopes have very simple toppings, as I’ve outlined here-spicy salsa, pungent grating cheese, onions and cilantro, but it's the corn masa base that plays the starring role.

En Veracruz, México, les llamamos “picadas”, y son más grandes, más o menos del tamaño de una tortilla. Gracias Rick por tu amor a nuestra cultura y gastronomía, te quiero!! Feliz 2022!

Sopes are the most underrated Mexican dish. My partner's mother(from Pueblo) would always shallow fry them for the second cooking and I love it that way. Nice and crispy.

Sopes are a favorite food among many people, especially when they're loaded with smashed beans, lettuce, cilantro, onion, cheese, and a good sauce. This combination of food fills the stomach and offers a delicious flavor. Many people enjoy sopes as a meal or as a side dish with other meals. The way of preparing sopes varies according to geographical region, but in general it is a healthy food that delights many palates.

I love Sopes! I get them from a taco truck in my small hometown. The nice folks who own it don't speak much English, and I speak very little Spanish, so ordering can be interesting! Amazing how far a friendly smile can get ya.

We fill the sopes with refried beans or rajas with requeson then dip them in a enchilada mole sauce and then fry up the sopes. We top them with salsa, lettuce, sour cream, and cheese.

In Tijuana and Ensenada (possibly other parts of Mexico), the classic preparation for a sope is a thin layer of beans, then shredded beef, a little bit of cabbage, some sliced radishes, then topped with a roasted tomato and oregano sauce, some queso seco, and maybe a dollop of Mexican cream. Rick has mentioned this before, but Mexican cream/crema is similar to a creme fraiche or just a plan heavy whipping cream. It's not the sour cream you usually get at American places.

Muy Sabroso! My first sopes were eaten in Puebla, MX. I wonder if one couldnt just dip them in the deep fry just long enough to crisp them up? Yep, I would definitely be using the lard instead of safflower oil. Go big I say. Where did you get that fantastic comal? looks like a non stick surface and that curved edge is a fantastic idea. OH, and the folks in Oaxaca who make those tortilla presses would be smart to imprint the different circles on the bottom of the plate for sopes, tortillas, etc. as a guide. Thanks for these delish memories.
