Sounds to me like you're in the unfortunate situation of dealing with a poor quality part design, and a dealer which seems not to be up to standard. Question is, would dealing with the age-related problems of a 20+year old Honda Helix be less headache? I remember the videos it was in, it did seem like a very nice machine.
Maybe there was an airlock when they refilled it and they assumed it was filled correctly theh the recent ride cleared it causing the level to fall? Just a theory?
This absolutely falls into “lemon law” territory - but most people have no clue how a lemon law claim actually works. Lawyers, and precise documentation, back and forth from the manufacturer, and I STILL won’t get back what I paid.

Water water everywhere but none left to leak...
I'd get rid of it as soon as possible.
Took it for another spin after topping it off (it was actually not that low afterall - maybe a few ounces). No leaks so far... video coming soon.
