@Mifamilia99 we use 2 types of tapioca flour and we use parmesan and our Brazilian cheese. With Mozzarela or other cheeses doesn't taste like our, but i am sure is delicious too. Our is just different.
Sometimes when you let it boil this happens. Almost a boil is the perfect way to go. Heating the liquid too much might be the problem. Sorry it didn’t work out. There is a full proof mixer version that is much easier and still very good. I will share the link 🔗
Im brazilian, and I made Pao de queijo. The real one is not made with tapioca. That’s wrong and not the tradicional Brazilian one. Go to some real information. 😊
Yes there are two starches that are traditionally used but it is not very easy to find at a local grocery store in the US. Tapioca works just fine and maybe you need a chill pill.

It needs to be a dry cheese, Cottage won’t work. You can use something other than mozzarella like chedder cheese
