I worked there during the change. They coat the fries in a ton of starch. The starch creates a crispy barrier on the outside of the fries that help prevent them from getting soggy. No soggy fries means you can hold them longer before throwing them out. The problem is that the fryer oil doesn't cook INTO the fry and give it flavor because the starch acts as a barrier. The potato on the inside just tastes like it was "heated up" and not fried. Also, the fries tend to stick together. To combat this, the company required us to stop using a fry basket press, which caused the topmost fries to be uncooked since they want to float in the oil.
Did they not used to stick? To be honest this most recent time I had their fries I did get a few fries that were stuck together, but before hearing of this change it had never happened to me
I've worked for a restaurant chain for 10 years. I was not expecting someone to actually explain (correctly) what happened already. We never use fry presses tho lol It has now been 7 years since CFA took my bagel away. I will not visit until they bring it back

I work as a lead at a Chick-fil-a store. This change was announced a couple months ago and they have started sending out the new product, but it hasn't reached most stores yet. My store doesn't have it yet and I knew about it since early October last year. I'm sure if you go to your local Chick-fil-a and ask, they will be more than happy to confirm if they have the new fries or not. But that might be why you haven't noticed a difference yet, because they aren't at all locations yet. Probably will be by mid 2025

I noticed immediately that the fries were overly crispy and tasteless. I just thought that locations standards just weren't good I couldnt even finish them.
Used to be, you looked thru the couch for change to go to Checkers, McDs, Taco Bell..... if you were lucky, you and the friend that helped throw the cushions across the room and put them back could eat..... now, you have to put that same couch on craigs list and pray you get a legit buyer soon enough to satisfy your fast food craving.

This is what happens when line must always go up forever. Eventually, you run out of ways to make like go up, so there's nothing left to do except cut costs and cut wages.

it’s like a forest. the old trees decay while new seedlings grow. on the way up, a company needs to have good quality to grow. after that, the new tree is sold to a bunch of corporate hacks who cut costs. as quality declines, the corporate tree decays. it’s an ecosystem. you just need to move on from the decaying companies more quickly.
If you boil potatoes in water and mash them you can add starch to basically soak up the water and hold the mashed potato together enough to form fries. Those fries will balloon up a lot more because they contain a lot of flavorless water. The flavor is probably coming from the peas. But the reason to do it is absolutely to sell less potato for the same price. Mashed potatoes fried or not do not taste the same as fried potato. Especially not when there is no enhancement added to the mix. Usually chefs add things such as herbs and cheese to the mix so it tastes different but still good in its own way. Without that it's just cheap bland knockoff fries equal to frozen boxed junk.

I work at Mcdonald’s, every time a quality change is made for the worse they tell the employees it’s an improvement so that we tell the customers that. Most employees don’t understand how food actually cooks they just put a basket in oil and start a timer. I bet you that what that chatter said was in a training sheet

As a current chick-fil-a team member I can attest to the fact that the fries have changed and that we have had many complaints about them. They start super crisp if you have them when they are first made but they go bad before you get to the bottom of a large.

We've gotten to a point where getting fast food is almost more expensive than eating out. I can get taco bell for two people for almost $25, but getting lunch for two people at a local sit-down restaurant costs less than $15.
What in the hell kind of restaurant are you going to that two people can eat for $7.50 each? That hasn't been a thing for a very long time. I call bs. Wendy's has a biggie bag for five bucks.... I don't even live in California and have a very cheap restaurant in a very small town here and there is nothing that cheap on the menu. The restaurant we go to has really underpriced and large portioned food, it's become one of my favorite places to go for that reason. I honestly don't know how they're still in business.

Raising Canes lets you customize your order pretty well. You can ask for chicken extra crispy, not breaded, extra crispy fries, butter-both-sides toast, and you can swap out items for more sauce, fries, slaw, or toast. You just can't swap out anything for more chicken
Putting pea starch on them isn't something that makes them able to cut corners better. They just might be crispier when they first come out but the downside to that is that fast food isn't usually made fresh, so they're bound to get more stale or harder tasting when they're sitting around
If you ask for crispy at canes that means they are supposedly cooked for 30 seconds extra. However most the time we just serve fresh food instead of food that has been sitting a little longer and call it crispy.
You have to remember that there are Corporate Chick-fil-A locations and Franchisees. The Franchisees can choose to keep the old recipe or even customize the menu and add things to the menu that Company owned locations don't have.

This is happening around the globe for most known fast food 'restaurants'. I'm from SE Asia, our McD chains upped the prices and fries changed recipes even before/during 2020. It had nothing to do with what or which business it was, but how most restaurants including the fast food industry just basically ignored the public's economical might and proceeded to drain our red life liquid for their own gains. I'm guessing by year 2030 plus, what used to be 5$ single set meal will eventually become 50$ or so. And we're still going to eat them because we have no other choice. Maybe.
I used to work there. This was not to cut costs, it was because people were complaining about the fries getting soggy so they switched to a different type that has more starch. It actually costs them more.

Having never been to a Chick-fil-A (I'm Australian, we don't have those here... except for Taco Bell recently coming over and soon Wendy's), this almost sounds like a New Coca-Cola thing. Change the recipe, people announce they hate it, company goes back to the old recipe like nothing happened.
You can do extra crispy and no salt fries at Raising Canes. It typically requires the people cooking to drop a whole different batch of fries for you, so there is a wait. But if you’re willing, go for it! I used to work there and remember the way everyone would groan when someone would request their food extra crispy since we were being timed for every customer in line.
I work at CFA and we no longer have to put a steam cover on the fries so they don't get crisp edit: we changed it about 3 months ago but didn't know we switched till about 1 month ago
Timers on the henny penny cfe-420 open fryers haven't changed. They have always shown 2 minutes, but the sensors will change the cook time to close to 3 minutes if you load the second basket. Yours might have a different model fryer but that is currently the common model fryer. But what changed are the actual fries. The rollout started around October/November, after some time in test markets, and is happening happening until April. Until then, some markets still have the old fries. If you have the red boxes then you have the new fries. The black boxes are the old fries. The new fries don't need the basket cover to compress the fries. Review brahs market probably just got the new ones and Charlie's market might still have the old ones. The new ones are crispier and stay crispier longer than the old ones, but they do have a different taste that some people notice. It becomes more noticeable when they cool down. The crispiness turns to chewiness and the flavor difference is more noticeable. The change was not done because of cost cutting either because the price didn't drop. It was done because one of the most common complaints on the receipt surveys was the crispiness of the fries.

Granted, the prices are dependent on market and distributor, but if all but one variables remain the same, then the only change would be production cost. And it makes sense to go up, if what is being changed is that an ingredient is being added.
As someone who works at a 24/7 store, when you never close the electronics go bad quicker, cleaning gets lesser and lesser, and quality largely decreases.

I feel like it depends on the staff who made it, unless it's a very wrong recipe that they changed... But if you get soggy fries, that means the temperature of the oil is not right (the common thing is overload the pan fry with the batter so that make the temperature of the oil changed to be cooler) or somebody who is in charged not let the air hit the fries (aka overcrowding the cooling rack with no motion of mixing). When I worked in McD where the franchise was known to be very fast, me in the grill and my sister in charge of the cashier, fries, shakes, coffee, and drive-thru, whenever there's a customer asked for "fresh fries" or "no salt", we always pull over the customer, let them wait for 3-4 mins to fry the frozen fries in hot oil, and when the machine timer beep to finish frying, she always do the mixing motion with salt on the empty cooling rack area while letting the air hit the fries to get crispy.
7:20 as someone who works at CFA this is very accurate. And the reason for that is inflation. The cost for all the products we use has increased dramatically, and one way to combat that, so we don’t have to raise prices as much for guests is to cut spending. Unfortunately quality often gets cut due to that because ultimately we’re forced to buy lower quality chicken, and now the fries are lower quality as well. But if people didn’t do that the food would have to be far more expensive, than it is even now
You gotta keep in mind chick fill a has been making record profits year over year. Its not like they need to change things unless theyre taking on more debt more quickly and need to offset that. Yeah the board may not be as happy and the c suite may not get as high bonuses, but chick fill a would be just fine not changing their fries. If this was a restaurant chain with a dangerously high debt to equity ratio, things would be vastly different. Regardless this sort of cost cutting usually doesn’t bode well for the longterm health of a company. I miss my fresh squeezed lemonade. Lol.

They still make money off all their franchisees, idk how it works for Chic Fil A but I know for Dominos you have to pay 100,000 just to start a franchise, and then you still pay a percentage of profit on top of that I'm sure.
Key phrase I think is that they stay crispier "longer". Meaning they now think they can get away with making a big batch and have it sit for longer before throwing them out. I think it's a dice roll, you can go get a fresh batch and notice nothing big. Or you can get a batch that's been sitting under lamps (or w/e they do) for what would typically be too long, and they taste off.

There are multiple factors in how crispy a fry gets Not only the coating (if there is one) but the temperature, thickness, texture, potato, any freezing/soaking, and time If you change one thing without changing the others, it can throw off the whole balance I worked fast food ,not chick fil a but elsewhere. Fries were made like a factory, should just be settings on a machine. But if the machine isn't set right the whole thing could be off with just a minor recipe change. Anyway I went through a whole thing when I tried to make the perfect fry trying to tweak all the variables. Took me probably like over a dozen tries over several weeks haha.

I noticed that my local Chick-fil-a's waffle fries suck now months ago, but I thought it was just the employees at my local place getting lazy with food prep - it didn't even occur to me that the recipe might've changed. That really sucks, their waffle fries were my top-tier favorite fries, and then they just suddenly started sucking, I don't even eat them anymore.
Your location may undercook them a little bit, which could contribute to you not noticing a difference. It might not be on purpose, either. If they up the starch and undercook them, you most likely will not taste or feel a difference.

The “they stay crispier longer” is what I think one of the biggest issues are. While that may be true, leaving food out longer tends to change the food’s flavor or texture. I don’t know the specifics but if the standard was to change them every 30 minutes but they’re now fine to only change every 45, the “crispy” thing isn’t the only factor impacted. Unless they’re all spread evenly on a heated surface under a heat-lamp, they’re going to cool at different rates and get soggy differently too. While food typically doesn’t taste different for the time they’re held up (at least for companies who focus on quality and consistency), food safety and temps are very finicky, even ignoring flavor. The ppl making those types of decisions aren’t usually consumers themselves nor are they knowledgeable, respected expert chefs/culinary experts. People don’t like change, so initial backlash is par for the course, but if there is a substantial drop in quality there is no reason they shouldn’t revert back or at least attempt to fix the issue/s. Time will tell Tldr; people may be getting served older product, which may be why the flavor is so different for such a “minor” recipe change.
6:00 as someone that used to work fast food, we had a lot of people ask for no salt on the fries, which we accommodated ofc because it could be a health issue. It pissed me off when they would ask for no salt and then they poured salt packets on the fries because “i want to control how much salt i get on them” even though they pour the same amount of salt that it would’ve gotten anyway. if someone asked for it “extra crispy”, i would tell them ok and then do nothing different with the fries

I assume it makes the fries stay "crispier" even when they are colder so they can sit around longer. I feel their fries have been "greasier" the last few times I've gone there. I have been a bit disappointed with them lately and not just in the fries.
One of the main issues is that when they hand you the bag they often put the napkins and sauces right on top of the fries. This traps steam and makes the fries very soggy. So the first thing I do when I get the bag is to take those things off the fries and that often helps a lot.

If you boil potatoes in water and mash them you can add starch to basically soak up the water and hold the mashed potato together enough to form fries. Those fries will balloon up a lot more because they contain a lot of flavorless water. The flavor is probably coming from the peas. But the reason to do it is absolutely to sell less potato for the same price. Mashed potatoes fried or not do not taste the same as fried potato. Especially not when there is no enhancement added to the mix. Usually chefs add things such as herbs and cheese to the mix so it tastes different but still good in its own way. Without that it's just cheap bland knockoff fries equal to frozen boxed junk.

I work at Mcdonald’s, every time a quality change is made for the worse they tell the employees it’s an improvement so that we tell the customers that. As a current chick-fil-a team member I can attest to the fact that the fries have changed and that we have had many complaints about them. They start super crisp if you have them when they are first made but they go bad before you get to the bottom of a large.

We've gotten to a point where getting fast food is almost more expensive than eating out. I can get taco bell for two people for almost $25, but getting lunch for two people at a local sit-down restaurant costs less than $15.
What in the hell kind of restaurant are you going to that two people can eat for $7.50 each? That hasn't been a thing for a very long time. I call bs. Wendy's has a biggie bag for five bucks.... I don't even live in California and have a very cheap restaurant in a very small town here and there is nothing that cheap on the menu. Fast food is overpriced but what you just said is a load of crap. And Taco Bell? Really I don't understand how anybody can eat that crap, they don't even make it taste like real food and the only thing you get out of it is a toilet visit every hour until that garbage is out of your system🤮

The restaurant we go to has really underpriced and large portioned food, it's become one of my favorite places to go for that reason. I honestly don't know how they're still in business.

This is happening around the globe for most known fast food 'restaurants'. I'm from SE Asia, our McD chains upped the prices and fries changed recipes even before/during 2020. It had nothing to do with what or which business it was, but how most restaurants including the fast food industry just basically ignored the public's economical might and proceeded to drain our red life liquid for their own gains.
I'm guessing by year 2030 plus, what used to be 5$ single set meal will eventually become 50$ or so. And we're still going to eat them because we have no other choice. Maybe.

I work at CFA and we no longer have to put a steam cover on the fries so they don't get crisp edit: we changed it about 3 months ago but didn't know we switched till about 1 month ago

Timers on the henny penny cfe-420 open fryers haven't changed. They have always shown 2 minutes, but the sensors will change the cook time to close to 3 minutes if you load the second basket. Yours might have a different model fryer but that is currently the common model fryer. But what changed are the actual fries. The rollout started around October/November, after some time in test markets, and is happening happening until April. Until then, some markets still have the old fries. If you have the red boxes then you have the new fries. The black boxes are the old fries. The new fries don't need the basket cover to compress the fries. Review brahs market probably just got the new ones and Charlie's market might still have the old ones. The new ones are crispier and stay crispier longer than the old ones, but they do have a different taste that some people notice. It becomes more noticeable when they cool down. The crispiness turns to chewiness and the flavor difference is more noticeable. The change was not done because of cost cutting either because the price didn't drop. It was done because one of the most common complaints on the receipt surveys was the crispiness of the fries.

Granted, the prices are dependent on market and distributor, but if all but one variables remain the same, then the only change would be production cost. I feel like it depends on the staff who made it, unless it's a very wrong recipe that they changed... But if you get soggy fries, that means the temperature of the oil is not right (the common thing is overload the pan fry with the batter so that make the temperature of the oil changed to be cooler) or somebody who is in charged not let the air hit the fries (aka overcrowding the cooling rack with no motion of mixing). When I worked in McD where the franchise was known to be very fast, me in the grill and my sister in charge of the cashier, fries, shakes, coffee, and drive-thru, whenever there's a customer asked for "fresh fries" or "no salt", we always pull over the customer, let them wait for 3-4 mins to fry the frozen fries in hot oil, and when the machine timer beep to finish frying, she always do the mixing motion with salt on the empty cooling rack area while letting the air hit the fries to get crispy.
7:20 as someone who works at CFA this is very accurate. And the reason for that is inflation. The cost for all the products we use has increased dramatically, and one way to combat that, so we don’t have to raise prices as much for guests is to cut spending. Unfortunately quality often gets cut due to that because ultimately we’re forced to buy lower quality chicken, and now the fries are lower quality as well. But if people didn’t do that the food would have to be far more expensive, than it is even now
You gotta keep in mind chick fill a has been making record profits year over year. Its not like they need to change things unless theyre taking on more debt more quickly and need to offset that. Yeah the board may not be as happy and the c suite may not get as high bonuses, but chick fill a would be just fine not changing their fries.
If this was a restaurant chain with a dangerously high debt to equity ratio, things would be vastly different.
Regardless this sort of cost cutting usually doesn’t bode well for the longterm health of a company.

If you change one thing without changing the others, it can throw off the whole balance
I worked fast food ,not chick fil a but elsewhere. Fries were made like a factory, should just be settings on a machine. But if the machine isn't set right the whole thing could be off with just a minor recipe change.
Anyway I went through a whole thing when I tried to make the perfect fry trying to tweak all the variables. Took me probably like over a dozen tries over several weeks haha.

The “they stay crispier longer” is what I think one of the biggest issues are. While that may be true, leaving food out longer tends to change the food’s flavor or texture. I don’t know the specifics but if the standard was to change them every 30 minutes but they’re now fine to only change every 45, the “crispy” thing isn’t the only factor impacted. Unless they’re all spread evenly on a heated surface under a heat-lamp, they’re going to cool at different rates and get soggy differently too. While food typically doesn’t taste different for the time they’re held up (at least for companies who focus on quality and consistency), food safety and temps are very finicky, even ignoring flavor.
The ppl making those types of decisions aren’t usually consumers themselves nor are they knowledgeable, respected expert chefs/culinary experts. People don’t like change, so initial backlash is par for the course, but if there is a substantial drop in quality there is no reason they shouldn’t revert back or at least attempt to fix the issue/s. Time will tell
Tldr; people may be getting served older product, which may be why the flavor is so different for such a “minor” recipe change.

6:00 as someone that used to work fast food, we had a lot of people ask for no salt on the fries, which we accommodated ofc because it could be a health issue. It pissed me off when they would ask for no salt and then they poured salt packets on the fries because “i want to control how much salt i get on them” even though they pour the same amount of salt that it would’ve gotten anyway. if someone asked for it “extra crispy”, i would tell them ok and then do nothing different with the fries

Capitalism demands constant profit growth. You get that from new products, cutting costs, and raising prices. Raising prices is usually more noticed by consumers, so cutting costs is the big method used. Lower quality being accepted

That's not capitalism that's "corporatism" - communists love conflagrating the two. You can have capitalism without publicly owned corporations constantly lobbying and forever squeezing profits. We did it for a couple hundred years
It doesn't cut costs to add to a recipe. This was an attempt to maintain quality in the era of food delivery apps. People complain about soggy fries, so they tried to adapt.

I assume it makes the fries stay "crispier" even when they are colder so they can sit around longer. I feel their fries have been "greasier" the last few times I've gone there. I have been a bit disappointed with them lately and not just in the fries.
One of the main issues is that when they hand you the bag they often put the napkins and sauces right on top of the fries. This traps steam and makes the fries very soggy. So the first thing I do when I get the bag is to take those things off the fries and that often helps a lot.
