Hi bro, I love them both, but if I had to choose one it would obviously be Sekiro, it's undoubtedly the game of my life. Sekiro is the most difficult and the most fun, but Elden Ring is longer in game time because you have a lot more to do and explore. My advice to you is to play both 🙂
