I have a pretty good strike rate , around 75-85%. I have a pretty sheltered site so take cuttings most of the year, Autumn being preferable so that watering isn't such an issue. I think I have some that require putting into pots, it's been a while since I checked, ( I've had a rough year)
I have 1000s of little ones growing under trees on the property i manage what would they be growing from

Do you root them in water or earth?
I used a good quality potting mix and clean pots. It worked well!

Grow bonsai?
I don't but there is a NZ Bonzai Association that shows some excellent examples of NZ Native trees as bonzai
