About chili peppers..one name is when fresh off vine same chili dried another name. THE stuffed poblanos fresh and baked is also dried makes rich mole sauce and yes good cooks have many different dried and raw peppers. Oaxaca renown for mole sauces.

Even with electricity this preparation seems to have a few steps...Think metate made out of lava stone, mortar, pestle to grind the spices and an appreciation for the food..need a blender to make sauces and marinades. The time to make authentic fresh food you have to adore it! It isn't bland or boring .
I am from yucatan..our pride is cochinita pibil. If another yucatecan see this...my god...no avocado on cochinita. That is a hard no. But still..mouth watering🤤.
