Rick Bayless Hacks: Japanese Peanut-Chipotle Sauce

  • Finding Japanese peanuts in a Mexican grocery store is actually quite common. True, they're great on their own, but I'll show you how to turn these savory, crunchy little snacks into a beautiful, versatile sauce.
    • 4 garlic cloves, peeled
    • 2 canned chipotle chiles en adobo
    • 1 cup (6 ounces) cacahuates japoneses (“Japanese” peanut snacks)
    • 1 1/2 cups chicken broth
    • Salt
    Place garlic in microwave-safe dish, cover with water and microwave at 100% power for 1 minute. Drain. In blender jar, combine garlic with chipotles, peanut snacks and chicken broth. Blend until completely smooth-this will take a couple of minutes. Taste and season with salt, if you think necessary.

    If you're wondering about the name "Japanese Peanut," like Rick said, they were invented in Mexico, but they were invented by a Japanese immigrant named Yoshigei Nakatani, and the name "Japanese Peanuts" stuck. Even if you don't end up making sauce, I recommend picking up a bag of the peanuts anyway. They're very good just on their own.

    "Japanese" peanuts are the best. How these aren't on ever grocery store shelf around the world is a mystery to me. I always load up my suitcase with a bunch whenever I go to Mexico.

    Rick speaks the truth that all Japanese Peanuts aren’t created equal. Not just the saltiness either. My mexican grocer probably sells 5-6 different brands for this reason. It seems crazy but there’s a lot more variety to the flavor profile than one might expect.

    The coating is actually not candy. It’s usually rice flower or wheat. Same stuff they use to coat wasabi pea snacks. Gives them that awesome glassy crunch. They’re my favorite snack especially with a cold michelada ;)

    I’ve been obsessed with these since childhood thinking they were actually Asian but turned out to be Mexican 😂😂😂😂😂 these are great when drinking beer or when drunk 😂 highly recommended .

    Actually originally cooked up in China many centuries ago and later Japanese learnt how to make it then some Japanese immigrants to Mexico introduce that to their new country.

    I never knew that "vent" at the top of the blender needed to be taken off when blending something hot. Why is that? I always just thought it was for adding ingredients mid blend, like steady drizzling in oil or something.

      If not it will blow the lid off many times.

      Taking the top off allows steam to vent. Not taking the top off can cause pressure to build up as you're blending. Blending hot things also releases that heat more rapidly
