3 cups all purpose flour
2 tsp baking powder
1/2 tsp salt
1 cup unsalted butter
1 cup granulated sugar
1/2 cup brown sugar
2 eggs
1 cup ube halaya (ube jam)
2 tsp ube flavoring
1 cup powdered sugar

Wow! I’m sending this to my nephew in Texas…he can’t find Ube cookies in the Asian markets there! He misses them from our California markets…hopefully, he can find ube😂

hihi!! ive tried this recipe and EVERYONE LOOOVES IT 😭 i didnt use a mini ice cream scooper bc if i did, i would have yielded more! if i dont have/cant find a mini scoop, about how many tsp/tbsp do you think a mini ice cream scoop is?

I'm guessing 2 tbsp would be equivalent to a mini ice cream scooper.
