I really like how this cake looks. The dehydrated apple flowers are wonderful idea. I think you could do the cake as a naked cake with the piped buttercream between cake layers, how you had it, & then the top piped & decorated just as you've done here. I like this look, too. You could have two versions of caramel apple cake. I liked the look of the piped frosting peeping between cake layers, & the apple-flower topped rosettes on top.

I made this for my Grandson who has recently became Vegan . It turned out beautifully,and very good. I did have an issue with the caramel becoming grainy after it came to room temp,do made another recipe for the caramel with full fat coconut milk,Brian sugar and Vegan butter.

tall beautiful cake. that is your wheelhouse and what I love. Just an idea but create a milk chocolate using soy or (better idea) almond milk and more sugar. I don't enjoy bitter dark chocolate. you are back and as great as ever.

Hi gretcheb my idol since ur transitioning to vegan i have a questions for example in this recipe. Can i substitute egg for flax seed if i substitute all the vegan ingredients to non-vegan would there be a difference in taste since in our country its very difficult to find vegan ingdnts if there is its too expensive :( hope u can help me. Hi Gretchen, by any chance have you experimented with using whipped aquafaba as a replacement for whipped egg whites in a cake? Last time we spoke it seemed it wasn't working out because the aquafaba doesn't hold it's structure when being baked. Just wondered if you've found any substitute successful. Thank you :)

Hi Gretchen, the Easter fasting started and I have to make a desert next week that has no animal product in it and I came across this recipe which looks extremely delicious and I would love to make it, but I am a little bit confused with the recipe. I clicked on the link for the vegan version and I end up with 2 different caramel sauce recipe and I think I have 2 buttercream recipes as well. Which one (of the 2) do I make for the cake? One caramel sauce has milk and one has butter and other ingredients (the wet version caramel sauce). Also one more question is blue bonnet butter vegan or not?
Sorry for the confusion, I tried to make it less confusing in my written blog post, if you rad it- it says: the caramel sauce as I show in the video below. Now I know many of you have had trouble with Caramel Sauce in the past, so I want to give you some options to make it easier. Sometimes you just have to find the right recipe that works for you. So please watch the video for my original Caramel Sauce tutorial (yes it was using butter and cream since I hadn’t yet made the switch to vegan, but the method and recipe is the same only substitute earth balance butter and almond milk for the dairy in that recipe) Or just follow this new recipe for caramel sauce as listed below and I show you how to make it in the video below as well. You can use whatever buttercream recipe you prefer that is why I gave 2 options. I do not believe Blue Bonnet is vegan , however a quick look at the ingredients list will tell you if it is. Thanks! :) I hope you try the recipe, let me know if you do!
can you do desserts for bariatric patients. i cant have sugar or flour and has to be low carb. i love baking but cant because i dont know how to change recipes. so i can eat them.
I'm so over naked cakes, in fact I never liked them to begin with. I'm pretty sure some clever baker started the trend because it's both less expensive and less labor intensive. Making the buttercream and covering the cake is one of the hardest parts, and all that dairy and shortening is expensive.
not a fan of the naked cake. Like my cakes all dressed lol . All that buttercream is the best part. Always liked your decorated cakes never get tired of watching Hope to get to see you behind the camera soon. Really miss that. 🍰

I have a dehydrator it is super fast that way, but the oven can work too, very lowest setting for at least an hour until they are dried

My caramel sauce thickens up to one big caramel chunk. Am I supposed to add cream to the sauce like it’s in the original recipe?

how about EnerG Egg replacer? (and reduce the baking powder slightly since EnerG has leavener already built in)
