  • I know you have Zucchini in the fridge ! Make Healthy and easy to prepare ZUCCHINI SALAD . This is only 3 ingredients Zucchini Salad recipe ,you can make in minutes. Low in calories but full of flavor. I used Mandoline Slicer but you can do it with knife as well. Budget meals healthy and tasty.
    Zucchini Salad
    1 big carrot
    2 zucchini
    3-4 green scallions
    2 table spoons chopped parsley
    3 garlic cloves
    1 table spoon soy sauce
    3 table spoons sesame oil
    1/2 tea spoon salt
    1 tea spoon Korean Gochugaru** red pepper ( can use paprika)
    ** Gochugaru pepper flakes can be find in any Korean supermarket or Amazon. Gochugaru has amazing smoked and spicy taste but its not as hot as regular red pepper flakes.

    Do you let it to marinate for a few hours or is it ready to eat immediately?

      Let it stay for 30 minutes for better result but absolutely fine to eat right away
