First up congratulations on the birth of your baby. I make breakfast wraps and muffins as well but I use a small sheet pan, lined with baking paper for the eggs. I crack them into the tray and I add Parmesan cheese, capsicum, shallots and a bit of cream. Bake in the oven until just cooked, allow to cool and then cut into the sizes of your wrap or bagel. My adult kids and hubby love them, especially when I sprinkle grated cheese on the top whilst it cools.
