    Ingredients Quantity
    Bottle gourd 1 no
    Water as required
    Mustard oil 1 tbsp
    Cumin seeds 1 tsp
    Carom seeds ¼ tsp
    Asafoetida 1 tsp
    Ginger chopped 1½ tbsp
    Garlic chopped 1 tbsp
    Green chilli chopped 4-5 no
    Onion chopped 1 no
    Salt to taste
    Tomato chopped 1 no
    Red chilli powder 1½ tsp
    Coriander powder 1½ tbsp
    Turmeric powder 1 tsp
    Dry mango powder 1 tsp
    Chaat masala 1 tsp
    Fresh coriander chopped 1 tbsp
    Coriander chopped for garnish
    Method :-
    1. Take the bottle gourd and roast it over direct flame till well charred on all sides.
    2. Now trim the stem and cut into one by two.
    3. Soak the bottle gourd into a bowl of water and remove the charred skin. Discard the water.
    4. Finely chop the bottle gourd.
    5. Place a kadai on medium flame and heat mustard oil. Add cumin seeds and carom seeds let them splutter.
    6. Now add asafoetida, chopped ginger, chopped garlic and chopped green chilli sauté for 1 minute.
    7. Add chopped onion and sauté for 3 minutes on high flame.
    8. Add salt and chopped tomato sauté 4-5 minute. Cook until they become soft.
    9. Now add red chilli powder, coriander powder, turmeric powder, dry mango powder and chaat masala mix well. Sauté for 1 minute.
    10. Add the chopped bottle gourd to the kadai and mix well with the masala.
    11. Place the lid and cook on low-medium heat for about 10 minutes, stirring occasionally.
    12. Mash well using a masher and mix.
    13. Now add freshly chopped coriander and mix well.
    14. Side out in serving bowl and garnish with chopped coriander.
