This is very similar to my soup that I make - the only difference is that I add 2 cans of Rotel instead of the tomatoes. Also try it on cornbread. Not a usual add on for Enchilada soup but oh so good. A dab of sour cream, maybe some diced avocado. Oops! Drooling on my keyboard again, thanks for taking the time to share with us.

Hi Susan, I think what you are seeing are 2 cans of roasted tomatoes. I like the Muir Glen brand. I do not use enchilada sauce in this recipe. Hope this helps!

Sorry if it's too complicated, David. Some recipes are easier than others and if you want the Enchilada Soup to taste like Chili's, then it call for these ingredients. Check some of the other comments, you'll find that people that have tried this recipe say that it comes out perfectly.
To each it’s own. I like scratch recipes vs when using canned foods. I’ve seen other recipes that use canned enchilada sauce. I’d rather use fresh ingredients. I make my own enchilada sauce as well. It’s a lot tastier. I can’t wait to make this recipe 😋

i made this ! its good! 4 quarts of broth is alot! so i had to use 3 quarts because my pot was brimming to the top :O

No, they don't have to be. Just make sure the one that you use to mix the Masa is hot.

Hi Gloria! I am not a canner, myself, so I don't want to advise you incorrectly. BUT, it does freeze very well. Hope this helps!
