Excellent - need to add the chicken shortly after the chilies. Would also suggest adding the peanuts before the sauce. Most excellent. Used balsamic vinegar for black vinegar.

+Cheth M He meant sherry or wine vinegar which is really easy to get..I really hate black vinegar an alternative is Balsamic it's much sweeter and I think gives a better taste..I find black vinegar acrid

Cyn Dynata Hi Cyn, it really depends on the dish as each dish requires certain ingredients but generally these are the most common ingredients I use: Kikkoman Soy Sauce, LKK Oyster Sauce, Koon Chun Hoisin Sauce, Pi Xian Doubanjiang, Fermented Black Beans, Chili Garlic Sauce, white pepper, Shao Xing Rice Wine, Sesame Oil, chicken powder, sugar, black or white vinegar and ketchup or tomato paste. Sorry for the long list :(

I followed your recipe and didn't use sesame oil at all -- and it came out superb. I just wondered, since most kung pao chicken recipes I came across seemed to always include sesame oil :)
Lotus Creative Hi Lotus, you can add in sesame oil if you want. The reason I didn't add it is because sesame oil is very strong in taste and because this dish already has strong flavor, it might get lost in there.

TheASTrader You add in the vegetables right after you flip the chicken over. It would take about a minute to cook before you add in the sauce.
