If you think about it since the Mariachi's were using their time machine and react to hearing the word birthday there is a high probability that they have in fact seen them before on another occasion. Its a new gag but just established "fact" in their world that mariachis show up and sing for your birthday

Season One Episode One had a different voice for Max, but from Episode Two onwards, he’s voiced by William Kastell.
