Ingredients:
For the Marinade:
1 kg chicken, cut into pieces
1 cup yogurt
2 tablespoons ginger-garlic paste
1 large onion, finely grated or made into a paste
1 teaspoon turmeric powder
2 teaspoons red chili powder (adjust to taste)
1 teaspoon coriander powder
1 teaspoon cumin powder
Salt to taste
For the Tadka:
3 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
6-8 curry leaves (kari leaves)
2-3 dry red chilies, whole or broken into pieces
4-5 garlic cloves, finely chopped
Instructions:
Marinate the Chicken:
Prepare the chicken marinade as described earlier, and let it marinate for at least 2 hours or preferably overnight.
Prepare the Tadka and Cook the Chicken:
In a handi or a heavy-bottomed pan, heat the oil over medium heat.
Add the mustard seeds and let them splutter.
Add the cumin seeds and wait for them to sizzle.
Lower the heat to prevent the spices from burning and add the dry red chilies and curry leaves. Be cautious as the mixture may splutter.
Add the chopped garlic to the pan and sauté until golden brown, being careful not to burn it as that would introduce bitterness.
Cooking the Marinated Chicken:
Once the garlic is lightly browned and aromatic, add the marinated chicken along with all its marinade to the pan. The tadka will infuse the chicken with a delightful flavor.
Mix well, ensuring the chicken pieces are well coated with the tadka.
Cook on high heat for a few minutes, stirring frequently. Then, reduce the heat to medium, cover the pan, and let the chicken cook until tender. This usually takes about 20-30 minutes depending on the size of the chicken pieces and the intensity of the heat. Stir occasionally to prevent sticking and ensure even cooking.
If the gravy is too thick, you can add a little water to reach your desired consistency.
Final Adjustments and Serving:
Once the chicken is fully cooked and the gravy has thickened to your liking, check the seasoning and adjust if necessary.
Optionally, you can add a squeeze of lemon juice for some added tanginess.
Garnish with fresh coriander leaves and serve hot with naan, roti, or rice.
