You should go ahead fry them up in the Cajun seasoning, crush up the Flamin` Hot Cheetos and dry dust them as soon as you take them out of the skillet. Put the Cheetos powder in a paper bag, drop a couple of cooked catfish chunks in and shake them around. I believe you will like the results. I do this with chicken wing and dust them with Tennessee Hot Wings powder in a paper bag and it is a lot less messy and plenty spicey.
