- Bang bang chicken originated in Sichuan China and I feel we have just elevated this chicken to new heights by adding nerf guns and special sauce.
Is this an authentic recipe, no it isn;t because I’m not from Sichuan China. I’m from Melbourne Australia barbecuing bang bang chicken my way. The flavours are popping, the chicken is tasty and you will love it.
As with all my recipes I run through the selection, preparation, seasoning, BBQ set up, times and temps, so you can recreate this recipe at home.

Main Ingredients:
1.2kg (2.6lbs) of chicken thigh (skinless and boneless)
Seasoning Ingredients:
2 tablespoons of sesame oil
1 tablespoon of chili oil
1 teaspoon of garlic powder
1 teaspoon of onion powder
2 teaspoons of smoked paprika
½ teaspoon of black pepper
Glaze and dipping sauce Ingredients:
1 cup of mayonnaise
½ a cup of sweet chili sauce
¼ cup of Sriracha
¼ cup of honey
(split between two bowls evenly)
Garnish Ingredients:
1 to 2 tablespoons of Chives (chopped)

I like using the only fire brk-6072 rotisserie kebab skewer for the weber kettle it has 7 skewers on a motor absolutely brilliant

I cooked these a couple weeks ago. the family loved it (wasnt from this recipe tho, sorry). I used a weber kettle and did them indirectly. then finished them off for a minute each side direct at the end

What's the benefit of using a Hibachi grill grate as opposed to the standard grill grate?
Thanks @ianleatherbarrow6676 generally smaller pieces of meat can be individually cooked without using skewers. I do find skewers roll into the crevasses of a standard great, so not sitting exactly as I want them when it comes to the final charring part of the cook. It's food grade stainless and it looks cool.
Fabuloso is that a word..should be..you can always wrap the part of the skewer that sticks out with flexible metal...and how about a video on deep cleaning your weber kettle...🍻
