Cold and grey here in Oakland. I was going to have soup out of the can until I saw your recent post. I'm using trumpet and porcini mushrooms sauteed with 1/2 an onion with a little cream but mostly milk based.

@Flo Lum I have fond memories of canned mushroom soup & always have a couple of cans on hand. It has to be made with milk and must be Campbell's. They now make it with cremini mushroom. But my favorite is homemade. This will be on the menu.
Interesting. I might just have to try this even though I've never been inclined to make mushroom soup from scratch. However, my son loves mushrooms in any shape or form so, I might reward him and make this! 👍😁
This looks wonderful. Could I use Shiitakes for the wold ones? And I agree with Dude. I never cared for the Campbell's and love Spam. (I still make his fried rice LOL)
I don’t know how I missed this video because I love Campbell’s cream of mushroom soup (sorry Dude) but would rather make my own version. This one looks delicious and I like your use of thyme. It adds depth that I enjoy. Flo does the cream add flavor, creaminess, or both? I ask because I’d like to try this non-dairy style and use less broth to insure a creamy texture. Yours looked great even before you added the cream.
The cream definitely adds creaminess. To me, cream doesn’t really add flavour but changes the texture and dampens the intensity of flavours. For example, I can’t drink coffee without cream. But I think the soup would still be good without cream but not the same. Hope that helps.
Flo Lum thanks Flo that helps a lot. The coffee example perfectly illustrates your point. I’m traveling today so this weekend I’ll make this recipe. And, since the cream gets added in at the end, I can easily make it with and without and taste the difference. “Love me some” Flo..!!! 😃
You’re actually correct not to salt the mushrooms while sautéing because the salt will draw the moisture from the mushrooms almost instantaneously. To combat that issue simply salt at the very end of the sauté. 😉
You did something with an air fryer. I don't see anything listed for an air fryer, and wondered if you could list it somewhere. I have been looking for an air fryer and was wondering what I should be looking for. Thanks!

Tracy....maybe try partially-cooked [sauteed] broccoli, cauliflower or asparagus. Each one will create a different soup but I think they'd all be delicious in Flo's cream base.
Love me some creamy mushroom soup! But remember to remove the bay leaves and thyme sprigs before blending. 🤦🏻♀️ Happy Sunday!

When preparing soup in the Vitamix how do you keep it from foaming up? Suggestions please.. thank you :)
The foam does disappear as you let it sit. Sometimes I find with the Vitamix, if I just let it run on low (like 1) for awhile, it helps.

Simple? I don't think so. Dump canned mushroom soup in the pot and add some more mushrooms and veggies. That's the whole recipe.
