"People of colour" comes out of the (imo, misguided) principle of "people first" language.
It operates off the assumption that the first part of a noun phrase is the most important, when in languages like English the opposite has shown to be the case.
That's pretty much how you can spot it as a manufactured/pushed term instead of one that came about naturally. Latinx being another notable example.

I'm personally pretty sure it mostly comes out of people wanting to say "colored people" but not wanting to use that exact phrase.
Its big issue is it has the same inherent problem that "colored people" also had (that one obviously also had some others) - it's either meaningless or insulting to everyone involved, depending on how you count white people.
- "white is a color too" -> so it is. Therefore "people of color" is just "people" and you've not actually advanced any information here. Nobody actually genuinely takes this stance I think and it only appears in Takes, but still.
- "white isn't inlcuded" -> so I guess white people are what in that case... just the default that you then have to color in to get the colored deviations from it, like a piece of paper? All of whom, diverse as they are, can be lumped together into one blob whose one defining trait is that deviation from the pristine norm?

You've developed as a person, and comedian to the point where you really have hit the nail on the head. I really appreciate your mental stability, at least, that's what I've noticed at present. I completely agree with your feelings on editing, I absolutely love the process and will probably keep editing for years to come.
