So for second method what heat levels are you cooking on, medium high throughout?
Also do you crush the garlic or just throw it in the pan?
What is the brown sugar for? Could I use honey instead?
I was cooking it on medium high at first and then turned it down to medium low after I flipped them once. I used whole garlic cloves that were not even peeled because I take them out at the end. It just adds a hint of flavor. You can crush it if you want, but I didn't this time. The brown sugar goes very well with the flavors of the balsamic vinegar, butter, and tomatoes. You can use honey instead, but it might not cut through the strong balsamic vinegar. I used balsamic because it goes well with spinach and tomatoes. Thanks so much for watching!!

Looks delicious. How long do you cook the lamb on both sides?
Thanks so much! I just poke at it with a finger until it felt medium rare. I'm not sure exactly how to describe how that should feel, but the mushier it feels, the more rare it is. The firmer it feels, the more done it is. So there isn't really a time limit like there would be in an oven. If you think you're cooking it too fast and it's not getting the color on it that you want yet, you can always take it on and off the heat to slow it down. I hope that helped. Thanks for the interesting video. However, I think your first dish basically ends up with lamb that taste differently to your mushrooms, which means that the mushrooms, despite their volume, ends up as a side dish, yet you had clumped them altogether, which does not make sense.
On your second dish, the longer I watch it, the more it grates at my heart, in more ways than one. Why do you have to keep scraping the stove heating element with the bottom of your pan? It damages both the heating element and the bottom of your pan and your intention to slide around the lamb is one of those actions, like pressing down on meat while it is being fried, that does no benefit to the meat, but instead damages your non-stick coating due to it scraping against the lamb bone.
Furthermore, your finishing action of increasing the butter content and then dumping in spinach makes absolutely no sense from the health nor the taste perspective. Who would want to east spinach sitting in a pool of fat? Even saying so, that your lamb comes out pink in the end, is a wonderful surprise.
