They met Jeong Jeong a few episodes before The Northern Air Temple. The main reason for Aang not even trying to bend other elements is proficiency. Like Aang is more skilled in using Air Bending, and he learned all he could about Water Bending from Katara (just the Pushing and Pulling of the Water along with The Water Whip) while Aang had a lot of trouble to even start bending Earth. And as proven in Jeong Jeong's teachings, Aang does not have the restraint needed to start Bending Fire. That said, for the LA series, the reasoning for Aang not bending other elements without the Aid of the Avatar State is most probably because he wasn't taught yet. (Lazy I know, as Other Avatars could easily bend most of the elements without training *looking at Korra*)

Now if thru the course of seeing his sister get stronger he realizes over time he was wrong about women, culminating in him sticking up for her in the N. Water Kingdom that would be an arc.
