      I am as well loving the chocolate color series, however I do have a question. What brand of coloring do you prefer as I have seen you use Chefmasters candy color for strawberries and the Chocolate Chameleon by Artisan Accents and do you ever use the colored Merckens Chocolate Melts?

    Hello Ro! So grateful I was referred to your channel so informative & such beautiful work. I’m new to the treats world so after the chocolate dipping has been completed how do I store the order before pick up or delivery? Also, how far in advance could an order of chocolate dipped treats be prepared?

    Just a question, please? Wondering why you didn’t clean your apples by boiling, like I’ve only seen you do. Is this only when using your 411 recipe?
    Also, is there a way to get a nice shine on apples dipped in candy melts? Seems like these have a flat look. I love your shiny apples.Thanks a bunch 😊😊

      Thank you so much. So the difference in candy apples and chocolate apples cleaning process can be the same process but not necessarily for chocolate apples. When dipping for candy apples the boiling Methodist done to strip the wax from the apple to achieve a bubble, free coating. When dipping apples in Chocolate you can do either both process. Meaning you can strip the wax if that’s your choice but not necessarily when it comes to dipping apples and chocolate the important thing is to bring your chocolate down to temperature meaning letting it cool before you dip and that’s why I don’t do the boiling method for my chocolate apples, because I know how to temper my chocolate for eight to cover my apples. I hope that helps.

    Hi, I don’t add flavoring and still get elephant skin after dipping apples. I can wait like 5 minutes and I still get it! Do you have a idea what I’m doing wrong

    Hello Ro...first and foremost I want to say I love your work and the tutorials...your 🍏’s & 🍓’s be so bomb...I know you mentioned in other videos you wait at least 48hrs., before dipping in this video did you dip the same day or did you wait 48hrs., because to me in this video the Granny Smith apples didn’t have the same color when you wait at least 48 hrs., I’m still learning from your tutorials...keep mastering your skill❤️

      Thank you ❤️ this video is about Chocolate not Hard Candy. That’s the difference. For dipping in chocolate you don’t have to let your apples sit when dipping in chocolate.

    Hello why after dipping strawberries do u rub against glass the back of strawberry doesn’t it cause less chocolate on the back which causes seeping from back of strawberry when it dries? Because that happens to me when chocolate dries at back side of strawberry it seems to seep little juice🤔

      Hello.
      That is true. It’s also my Preference to do it that way but if you choose not to scrape the bottom of your strawberries because I slightly scrape mind which has a thin layer at the bottom. But after you dip your strawberries you can put them on Bostick and place them on a Styrofoam and that way you’ll have a fully covered Strawberry and don’t have to worry about any leakage from the strawberries

    I will admit to cheating slightly and using cheaper melts in combination, but yes this chocolate steps it up a huge notch!

    I will say this and I learned the hard way. Every microwave is different. You have to change the power on your microwave from 10 to about a 4 or 5 to melt the chocolate and it will not burn. It took me almost a year to figure that out

      That is true. I have taught that in my classes. But with this technique it will work either way because of the amount of chocolate I’m starting off with, plus after the first 30 sec interval if your chocolate has completely melted then you wouldn’t put it back in the microwave. Still let the chocolate sit for 5mins before dipping

    I have had so many problems melting Mercans chocolate. The first time I tried to melt it in the microwave it got hard and the baking supply store said it can't be melted in the microwave. The told me to use a double boiler. That didn't work either. So I see you are doing yours in the microwave. I'm confused.

      I used microwave with Merkens with no issues. I started with first 30 second interval, waited 1 minute, 30 seconds more.

    Where do you find paramount crystals ? I’ve looked everywhere in Toronto and can’t find them!
