    December 1, first Christmas cookie of the season! I wish I could post a photo! My "loaves" look fake they are so beautiful- golden and shiny! I cooled them for 8 minutes and then sliced. Still a few broke but what a treat for the maker! (That would be me). I got a little adventurous and hydrated the cranberries in an 1/8 cup of Grand Marnier (orange-flavor liquer). Not sure that it added anything to this already-excellent recipe so, next time, I'll use water and sip the Grand Marnier! Thank you Alessandra. I'm so happy to find your site.       Smiling imaging your beautiful perfect loaves. Food is indeed love. The idea of soaking the cranberries is spot on. I keep a jar of raisins in whiskey and so yummy over ice cream. Lol I had them soaking for making apple pie but the raisins never made it in. 😂😂buon Natale cara Maria.

    Thank you for this recipe Alessandra. I have a biscotti recipe but it’s with almonds.Have to do this recipe. I want to share one trick I learned when slicing . Slice them using an electric knife, it really makes it easy and they do not break🙋‍♀️👍👍👍😀

      Thank you! You can switch up the pistachio for other nuts. Also switch vanilla to 3/4 tsp almond extract. It’s really a very versatile dough. Let me know what combination you choose. 💖💖

    Thank you for the video tutorial! I will definitely try this recipe. I do have one question. Have you ever tried shaping the logs on the parchment and then simply sliding the parchment onto the baking sheet? I wonder if that would help with the logs not losing their shape.

      Thank you so much for watching. This is my favorite go to recipe for biscotti and I just change the type of nuts and berries. I will try with the parchment paper but I’m sure a little flour will still be needed. It is a soft dough. I’ll be making them this weekend and I’ll try and let you know. Grazie di cuore 💚🤍♥️

    I just made these ( with almonds as I didn't have unsalted pistachios) but it just might be the best biscotti recipe I have tried. They are perfectly crisp but not too hard and so tasty! How do you store yours Alessandra?? Buon Natale to you and yours!! xo

      Hi Nathan, you sure can. It’s a great base biscotti recipe and the pistachio or cranberries can be changed with other things to your liking. You can also swap out vanilla and add 3/4 tsp almond extract. E hoy! 💖

      This is not my grandmother’s recipe. Biscotti are not a very popular thing when I was growing up.
      We host an annual Christmas exchange party and over the years I’ve collected many of our family favorites.
      The equivalent of the biscotti from my nonna is the Rococò recipe I have up on the videos.

    HI! Great Thanks ... I'm using toasted hazelnuts. I would love to know if I can use butter rather than oil .. is that possible? What would the exchange be if I can do that?

      You can certainly use butter instead. I would do a almost 2/3 cup of butter. Let me know how they turn out. These are one of my favorite cookies. Delicious anytime 💖
