I know this is many years later, but for anyone else curious, you can put softened butter under the skin (pull it up and rub between the skin and the turkey breast.). You can make an herbed butter with poultry seasoning if desired.
@@vanessaalbuquerque2203 yeah you can mix in your dry seasonings with your butter and cover your Turkey just before you roast. I like adding a handful of butter between the skin and breast on each side. Makes for a better more tender meat
if you leave it uncovered, the skin will dry out a bit more, supposedly giving crispier skin. I never have room in the fridge for the bird to just lie on its back, so it goes in some sort of container, which effectively covers some of the skin, and tbh no one really notices or cares. I carve up the bird and the crispiness of the skin never matters to our group.
So why do you use a sheet pan if youre just going to transfer to a roasting pan? Doesn't the juice from the bird drip all over the inside of the fridge?
She does not use all the brine. The amount of salt she uses will result in a salty turkey if you use all the brine you make. Use the ratios to prepare the brine but do not use it all!!!
Nah.. the process of dry brining lets the salt/spices seep into the meat thru the skin.. you can do it under the skin as well if you prefer, but not necessary honestly.. I've never had a tasteless dry brined Turkey and I like a lot of flavor. Don't knock it, until you try it! 🤗

If you let it sit for at least 2 to 3 days in the fridge, the turkey will come out much more tender with the spice flavors enhanced also!

I usually add my seasoning with the butter. Dry brine just strictly course sea salt for 24 hours.

I line the bottom of my fridge with aluminum foil to make it less of a hassle to clean up.

All of the methods will brown the skin. It's just a matter of which method will impress your guests the most. 😉
